Taco Chili in the Crock Pot

042title

Happy Monday, Friends!! How was your weekend? I hope it was a fun one. Mine was VERY low-key to say the least…. we spent the entire weekend, including Friday, holed up in the house due to the horrible ice storm, here in Texas. No marathon, no gymnastics meet, no manicure, no Christmas show for Madelyn with her teacher, no spending Saturday evening in Dallas….. we had tons of stuff planned for this weekend, but we stayed inside by the fire and pretty much just ate all weekend long. That’s right, I’ve got lots of new recipes to share with you! Taco Chili in the Crock Pot | Hungry Healthy Girl The one I’m sharing today, Taco Chili, is my favorite. Remember when I said that this chili was my favorite? Well, this taco chili just took the top spot and is like no other chili I’ve ever had…. it turned out to be the best chili. EVER. The refried beans and Contadina tomato sauce are the perfect additions and add a wonderful creaminess that most chili recipes don’t have. All of the ingredients meld together so well and make for a super tasty bowl of slightly spicy delicious chili.

Taco Chili in the Crock Pot

Hearty chili with a light spicy flavor. The best ever!

Ingredients

  • 1/2 onion, chopped
  • 1 16-oz can black beans
  • 1 16-oz can refried black beans (if you can't find refried black beans, just use regular refried beans)
  • 1 15-oz can tomato sauce (I use Contadina brand.)
  • 1 14.5-oz can diced tomatoes (I used Contadina brand.)
  • 1 4-oz can green chilis
  • 1 packet taco seasoning
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 pound ground turkey (ground chicken or beef would work too)

Instructions

  • Combine onion, black beans, refried beans, tomato sauce, diced tomatoes, green chilis, taco seasoning, cumin, and chili powder. Stir in ground turkey and cover. Cook on low for 6-8 hours. Top with your favorite toppings; such as fresh cilantro, sour cream, cheese, Greek yogurt and/or avocado. Also try it with as a dip with tortilla chips or as a topping over rice.

Taco Chili in the Crock Pot | Hungry Healthy Girl Almost even more awesome than the taste of this chili is the ease of cooking it up. This recipe is seriously just as simple as combining ingredients in a Crock Pot. You don’t even have to worry about browning your ground turkey before adding it to the Crock Pot; just stir it in and it will slow cook and marinate all day, taking on the flavor of the seasonings. Could not be easier….. or tastier! This would be great to make over the holidays to feed a crowd, but not keep you hanging out in the kitchen all day. ContadinaLogoAuthorPro As I mentioned, I used Contadina brand tomato sauce and diced tomatoes for this chili and I could not be happier with the quality of these ingredients. Contadina has also created these really funny comedic video series, ‘Somewhat Famous’ . The series is a funny spin off celebrity reality shows, and takes viewers into the kitchens of real moms, who happen to share the same names as A-list celebrities. Check out the one posted below; featuring “Meg Ryan”. Also, head on over the link below for other recipes containing Contadina products.

5 Facts Friday

weather

Happy Friday, guys!!!!! I’ve never done a “5 Facts Friday” post and I’ve got some random stuff to share, so I thought this would be the perfect Friday to join in.

1. We’ll start off with the most pressing topic of concern in my life…. my marathon is on Sunday. And that’s not all…. School has been closed in all areas around us and the weather channel is predicting this may be the worst ice storm in 40 years for Texas. The Dallas Marathon has not given official word, yet,  but there is a good chance the race could be canceled. This is very disappointing, but I don’t want to risk my life getting there either. Take a look at the current weather {Thursday night}!

2. I’m currently hunkered down by the fire, while the freezing rain comes down. Love cozy nights inside, by the fire, but not all of the hassles of ice on the roads. I’m actually trying to come up with a good soup or chili recipe and watching Sound of Music. Did you guys watch? I thought Carrie Underwood and the rest of the actors did a wonderful job singing, but I got a bit bored with it and this is coming from someone who absolutely loves the original movie. On another note…. we need some presents under the tree!

3. Justin Timberlake!!!! It was truly the best concert that I’ve ever been to, not that I’ve been to all that many. Seriously, though, a phenomenal show! If you have the chance to go see him, you should definitely take it. Landen and I had a great mother-son date night!

concert

However next time I go to a concert during the week, I’ll take off (from work) the day of and day after. He didn’t finish until around midnight and I was one tired girl and then I had an hour-and-half drive back home from Dallas.

4. Our family Christmas cards came in the mail this week and I’m really happy with them. I ordered them from Minted.com. Since I won’t be going anywhere today, due to the weather, I’ll probably work on getting these ready to send off.

5. The next Conscious Cleanse starts in just one month, January 11th, and early bird registration opens up TODAY!! This will be the perfect time {after the holidays} to participate in a cleanse. I definitely plan on participating. Click here and use code EBCC114 for $25 off registration, valid today through Sunday, December 15th. If you’re interested in my thoughts on the cleanse, I have a whole page—–> here, on my experience.

Something to think about…..

Is it cold where you live? Any ice storms in your area? Stay warm, toasty and safe; if it is!

Do you send out Christmas/holiday cards? I always do…. they’re so much fun to give and receive.

Did you watch Sound of Music? What did you think?

What is the best concert you’ve ever seen?

Enjoy your Friday and weekend!!! Wish me luck with the marathon….. if it is still held.
