Coach’s Oats is an awesome product! They are 100% all natural whole grain oats that are toasted to bring the natural sugars to the surface, then the oats are cracked. Instead of taking 30 minutes to cook like traditional steel cut oats; Coach’s oats can be made in 3 to 5 minutes on the stove or in the microwave. You can even bake with Coach’s Oats without pre-soaking or cooking. Check out the scrumptious pancake that I made with Coach’s Oats!
These oats were invented by Coach Lynn Rogers and Bonnie Rogers. Coach was an award-winning, gymnastics Coach at Cal State University for over 20 years before starting an oatmeal company. These special oats all started because the Rodgers’ wanted to make their friends a home cooked breakfast. They loved traditional steel cut oats, but didn’t like the time it took to make them. After many trial and errors in their kitchen Coach’s Oats was created.
I have had great luck cooking Coach’s Oats with various add-ins and flavors, but this recipe for Coach’s Mango Yogurt Oats is one of my very favorites. I mean who doesn’t love a fluffy, creamy, super delicious bowl of oats?!?! My add-ins of choice are chopped mango pieces, mango Greek yogurt and Chia seeds. The yogurt gives the oats such a wonder flavor and lovely creamy texture and the Chia seeds make the oats really fluffy and thick.
Mango Yogurt Coach’s Oats with Chia Seeds (serves one)
3/4 cup water
1/4 cup Coach’s Oats
1/4 cup mango Greek yogurt (Chobani or Trader Joe’s brands are my favorite)
1/2 cup chopped mango
1 tbsp Chia seeds
1 tbsp roasted coconut flakes (optional)
1 stevia packet (optional)
Bring water to rapid boil. Add Coach’s Oats and reduce heat. Cook for 2 mins and then add in the yogurt, mango and chia seeds. Cook for another 2-3 minutes, stirring occasionally. Remove from heat, cover and let stand 1 minute. Transfer to a bowl and add any other desired ingredients; such as stevia and coconut flakes.
