Sensible Snacking on Fruit

Hey, guys! How’s it going? The “What I Ate Wednesday” theme this month is sensible snacking. Since I’ve been on the Conscious Cleanse, my snacks of choice have been fruit, baby carrots and Sunflower Hemp Seed Balls. On the cleanse, you are to eat your fruits alone or in smoothies. I take full advantage of snack time by going for the fruit almost every time.

Breakfasts as of late have been green smoothies. These green smoothies are something from the cleanse that I plan to continue on most mornings. There is nothing like getting a fill of veggies first thing in the morning. Yesterday, I made my smoothie with a handful of kale, a handful of spinach, 1 banana, 1 cup frozen mango chunks, 1 cup unsweetened vanilla almond milk, 1 cup water, 1 tbsp raw sunflower seed butter and I added 1 tbsp of Q’ia. It was super delish! Have you heard of Q’ia? This was my first time using it, but I’m planning to do more experimenting with it and I also will have a giveaway coming up, so you can try it for yourself.

After breakfast, I did some blogging and then tried to get some vacation stuff put away. Unpacking is such a chore, especially when sand is involved. ;) Alexis was at summer school and my two younger kids spent the night at Nana’s house, so I enjoyed a quite morning and then took Max for a 3 mile walk; just before it started to get too hot.

When I got back from my walk, I was starving so I made a salad with mixed greens, avocado, mushrooms and coconut oil. Have you every tried melted coconut oil as a salad dressing? It is absolutely wonderful! I also had some roasted cauliflower on the side and added some leftover chopped chicken to my salad.

After lunch, it was time to run some errands. I had to make a stop at the post office, bank and grocery store. I took an apple with me to snack on while I was gone. When I got back from the store, I snacked on these super sweet and highly addicting organic purple grapes and raspberries. Organic grapes are hard to come by in my area, so when I come across them I always grab them up.

Dinner was fantastic and it included a brand new recipe that I’m so excited to share with you. I’ll be sure and have it up on Friday. I massaged a couple of handfuls of kale with avocado and topped it with a cauliflower “rice” salad. I served the salad with chicken tenderloins that I cooked on the stove in a little olive oil. I seasoned my chicken with Trader Joe’s Everyday Seasoning {my favorite} and salt.

Exciting Stuff

Whew….after a 12 hour drive back home from my vacation in Florida, we all made it back safe and sound. I LOVE Florida and definitely miss it, but I missed my hubby, home and Max so much, too.

There are several exciting goings on in my life, today!

My son, Landen is 12 today. Where did my sweet baby boy go? Haha….he’s still sweet, but we’ve for sure hit that teenager attitude. I cannot believe, I have a 16-year-old, 12-year-old and 7-year-old. YIKES!

Yep, that’s coffee brewing! It’s back in my life, after a two-week break during the Conscious Cleanse. The last day of the Conscious Cleanse was Sunday. Yesterday, I ate the Conscious Cleanse way, with exception of adding corn in and seeing how my body handled it and so far, so good. I wasn’t planning on testing corn first, but Brad had an awesome meal for me when I arrived home from my vacation yesterday evening. He grilled salmon and corn-on-the-cob; which is, by the way, extra delicious from the grill.

Speaking of the Conscious Cleanse, I’m SOOOOOO excited about my incredible results on the cleanse. I’m going to devote an entire post to my complete thoughts of the Cleanse on Thursday. Be sure to check back.

Last, but definitely not least, exciting news for the day…..drum roll, please…. I’m going to the Healthy Living Summit 2013!!! I’m so excited to have taken the plunge to attend my first blog conference and this gives me something to look forward to after summer!

I’m absolutely thrilled to be guest posting today for Kim as she enjoys her vacation. I found Kim’s blog relatively recently, but love following along with her interesting, inspirational, and fun posts.

I began reading healthy living blogs a few years ago, and was so inspired that I decided to start my own. The only catch for me, though, is that I have food allergies (my two biggest are eggs and nuts), which often makes finding healthy, allergy-friendly foods difficult.

Soon I realized that there is no better way to ensure delicious, good-for-you eats than to make them yourself. Cooking and baking are two of my biggest passions, and because of my food allergies, I get to experiment a lot in the kitchen and then share my creations with everyone through my blog. I love it!

The recipe that I want to share with you all today is just in time for summer: Strawberry Lemon Frozen Yogurt. It’s sweet, refreshing, and all natural, which makes it perfect for a pool-side party or a lazy summer day. It is also free from nuts, eggs, soy, and gluten, and you don’t need an ice cream maker to create it!

Note: Store yogurt in the freezer in an airtight container. Because there is no cream in this recipe, it might get icy after a few days. To overcome this, allow it to defrost in your fridge for about 45 minutes before serving.

What I Ate on Vacation!

Hi guys! Hope everyone is having fabulous week, so far. We are having a blast in Destin and trying to soak in every moment of fun. Courtesy of Jenn from peasandcrayons.com, today is What I Ate Wednesday on Vacation!

what i ate on vacationLet me just remind ya’ll, that not only am I on vacation, but I’m still sticking with the Conscious Cleanse diet and it’s still going really great.

I started my day with the usual, cleanse required, 32 oz of warm lemon water and then came my yummy Banana-Pear Green Smoothie. I was doing a little blog reading with my breakfast….can you tell what blog I’m reading?

We hit the beach at about 11:15 and had fun in the sun until about 4:00 and until we were turning into little lobsters. ;) We were so diligent with the sunscreen, but still burned……

I stopped around 12:30 for lunch and had a delicious salad with mixed greens, beets, zucchini, guacamole, radishes, mixed raw nuts, sunflower seeds, olive oil and lemon juice.

It was my sweet nieces first time at the beach and they absolutely LOVED every minute of it!

I had some watermelon {I forgot to photograph} and later had some apple slices with baby carrots for snack. The apple slices and carrots is quickly becoming my favorite snack and it is so filling.

When we got back to the hotel, we let the kiddos swim for a while in the pool and then went up to the room to get dinner started. For the kids it was Annie’s Mac ‘n Cheese and chicken tenders. I had tilapia fried in the skillet with a little olive oil and Trader Joe’s Everyday Seasoning and roasted green beans, cauliflower and zucchini. Great post beach meal!

The weather was so beautiful that after dinner my sister, mom and I sat out on the balcony of the hotel {which has an amazing view} and chatted. It was an absolutely lovely end to a really fun day! I can’t wait to do it all over again tomorrow!

(Guest Post) Spicy Shrimp Pasta

Hey, guys!! All five kids, my sister, mom and I made it safely to Destin. The drive was great and the kids did wonderfully. We left my mom’s house at 5:00 am, made 4 bathroom stops {including 2 gas-ups} and arrived in Destin at a little after 5:15 pm…..perfect timing! I’m planning to hit the beach first thing this morning, so I’m featuring one of my favorite bloggers today with a fantastic looking recipe. Enjoy!

I love reading Kim’s blog because she is always posting new, healthy recipes that are easy to prepare.  Like Kim, I am a busy working mom but I still want to find time to feed my family real, healthy food.  A few years ago when I suggested that we clean up our eating habits, my husband was on board with the changes.  My husband is from Louisiana, where everything centers around family and food so trying to healthify some of his favorite foods has been a challenge.  Since most of the food he grew up eating were fried, rich, heavy or spicy, one of his complaints is that sometimes healthy food can be a little bland or boring.

Spicy Shrimp Pasta

That sent me straight to the kitchen to create a recipe for a healthy, flavorful, spicy shrimp pasta dish that quickly became one of his favorites.  Instead of frying the shrimp, I season it with red pepper and grill it in extra virgin olive oil.  Then I make a spicy tomato sauce, add a special ingredient at the end for richness and serve it over whole wheat pasta.  If you have kids who are not big fans of spicy food, you may want to cut back on the red pepper when you grill the shrimp.

For a low carb option, you can also serve the spicy shrimp sauce over spaghetti squash.  To pump up the nutritional value, add a cup of baby spinach to the spaghetti squash before topping with the spicy shrimp & tomato sauce.

Marvelous in my Monday (Preparing for a Road Trip)

Yippee…..it’s Monday! That means while you’re reading this, I’m driving from Fort Worth, Texas to Destin, Florida. It’s about a 12-hour drive with 5 kids in the car….yikes! We’ve got plenty of activities prepared to keep them busy; like coloring books, iPads, movies and more. I actually think that they’ll do great.

Friday night, Madelyn had her 2nd horse show. There was a bit more competition at this show, but Madelyn did fabulously!

This weekend was all about prepping for the trip. Saturday, Madelyn and I ran a ton of errands. We made a trip to the spa to get bikini ready, Trader Joe’s for road trip snacks,  Wal-Mart for movies and other essentials, got the car washed, and filled it up with gas.

On Sunday, I spent the day doing laundry, packing and getting the house in order. We don’t have much extra space in the car, so packing has to be very strategic. Not the prettiest picture, but that’s reality…. ;)

I posted yesterday about how the Conscious Cleanse was going, so far. On the cleanse, each of the two weekends is dedicated to purification and you are only to consume fruits and vegetables, with no more than 2 tablespoons of oil each day. I’m craving nuts and seeds and would prefer to make my smoothies with almond milk, but all-in-all it hasn’t been too rough. I think that’s helped that I’ve been so busy preparing for my trip that I don’t have time to think about food. ;)

This is a Conscious Cleanse approved salad that I had on Friday, before the purification days started. Veggie-packed with hemp seeds and Garlic Caesar Dressing!

Conscious Cleanse Update & Weekly Meal Plan

Hello, friends! I wanted to pop in with a quick post, as I’m in the midst of packing and checking off all of my to-dos before I hit the road for Florida tomorrow. I’m just slightly excited!! ;)

I wanted to give you guys an update on how I’m feeling and how things are going on the Conscious Cleanse. I’m actually feeling absolutely wonderful and down 3 pounds! Judging from the other Conscious Cleanse participants’ feedback on Facebook, I think that I’m having an easier time on the cleanse than most. I’m very used to drinking green smoothies and eating a variety of different veggies. With that being said, I did have to give up a major love of mine….coffee and I also have the world’s largest sweet tooth. I have to say, though, it’s been way easier than I thought to stick with the cleanse. I feel that one of the main reasons that it has been so easy, is the support from Jo, Jules and the rest of the current June participants on Facebook, on conference calls and email. It seriously makes a HUGE difference!

This week, I’ll be eating super easy and clean meals. Since I’ll be in Florida, I’m not planning out anything too complicated. We are staying in a condo with a full kitchen, so I will be cooking most of my meals and we won’t be eating out a whole lot.

Breakfast- Green smoothies and you better believe, I’ll be having my new favorite Banana-Pear Green Smoothie!

Lunch- We’ll be taking our lunch to the beach each day and my plan is to make veggie-packed salads. I will change the salad up by adding nuts/seeds, or roasted chickpeas, or brown rice, or quinoa.

Snack- I’ve already been preparing my road trip snacks and snacks for the beach; which will consist of raw nuts/seeds, baby carrots, apples and Sunflower & Hemp Seed Snack Balls.

Dinner- Dinners will probably be much like lunch with added baked fish or chicken to the salad.

Sunflower & Hemp Seed Balls

Happy weekend, guys! Hope everyone is having plenty of fun with the perfect amount of relaxation mixed in!

Before I started the Conscious Cleanse, I had really been wanting to give hemp seeds a try. I keep seeing them popping up everywhere, from smoothies to nutbutters and the health benefits are amazing.

Many of the smoothie recipes in the Conscious Cleanse book include hemp seeds, so I knew it was time to break down and buy some hemp seeds. I found them at my local grocery store, HEB and I’ve also seen them at Kroger and Costco. You can also order them from my favorite online health store, Swanson Health Products.

I first, mixed a tablespoon of hemp seeds in one of my morning smoothies and, of course, I couldn’t taste it and would have never guessed it was even mixed in. Next, I experimented with sprinkling the seeds over one of my veggie-packed salads. There wasn’t a lot of taste, but I really liked the texture. Lastly, I used hemp seeds to create these wonderfully delicious and super healthy snack ball.

If you’d like to find out more about the health benefits of hemp seeds, you can check out this link for a complete description, but I ‘ll give you the lowdown.

  • Hemp seeds are a complete protein; they contain all eight essential amino acids, those that your body cannot make and must be ingested.
  • They contain healthy fats that have positive effect on the inflammatory processes of many chronic diseases such as cardiovascular diseases and various  cancers.
  • They contain a great amount of fiber; which lowers bad cholesterol in the body, keeps your bowel movements regular and is associated with a lower risk of  cardiovascular disease and diabetes.
  • Hemp seeds contain the vitamins thiamine, B1 and riboflavin B2.
  • They are also a  good source of the minerals phosphorous, potassium, magnesium, calcium, iron,  sodium, manganese, zinc and copper.
  • They have a high level of  antioxidant tocopherols.
