A Look Back at March 2014

Happy April and happy April Fool’s Day! No foolin’ over here, today! March was a great month and I have a feeling April is going to be even better. Let’s take a look back at last month and some of my favorite posts…..

You know how last month I challenged myself to create more savory than sweet recipes? Well, guess what? I did it!!! If I counted right, I had 7 savory recipes compared with 4 recipes on the sweet side. I actually don’t even know if you would consider the sweet recipes “sweet”…. they were all breakfast recipes except for the Almond Butter Honey Cheerio Bars. Now we’ll see how long we can keep this trend going! ;) While we’re talking breakfast, I have to say, some of my BEST breakfast recipes were created this month.

You guys know how much I adore (yes, adore) waffles and my whole family was loving the Heart Healthy Whole Wheat Chocolate Chip Banana Waffles. Bananas and chocolate…. need I say more? And I’ve been on a major muffin kick, lately. I mean two muffin recipes in one month…. whoa! The Skinny Blueberry Muffins are wonderful and they were the most pinned recipe of the month and the second most visited post of the month. Yay, for blueberry muffins! If you’re looking for a cinnamon sugar donut in muffin form, look no further…. try these Mini Snickerdoodle Muffins. They quite possibly may be the most delicious recipe of the month…. not necessarily healthy, but definitely scrumptious! Last, but definitely not least, I can’t leave out my third most pinned recipe of the month…. Strawberry Cheesecake Baked Oatmeal. Breakfast at it’s best, I tell ya! Now onto those savory recipes…..

And the award for most visited post of the month is my Conscious Cleanse Spicy Black Bean Burger; which by the way is vegan. The Black Bean Burger was also my second most pinned recipe for March. You guys sure love your veggies and this is a very good thing because lots of my recipes this month were vegan and all but the Roasted Squash and Mushroom Meat Tacos were vegetarian and these tacos could easily be made vegan. Probably my very favorite recipe of the month was the Texas Caviar. It has such a fresh light flavor that Brad and I could not get enough of… perfect for Spring picnics!

Even though we’re breezing right into Spring, I’m still loving soup and chili. I’m pretty much cold all of the time, anyway, so it’s all good. The Butternut Squash and Black Bean Chili that I made this month is one of the tastiest and easiest chili recipes I’ve ever made. To get your green fix, we’ve got my go-to Spinach Mushroom Dinner Omelet. I’ve had this thing at least 3 times a week for the past couple of months… it’s that easy and that delicious! And for the salad lover in you, the Blackberry Quinoa Kale Salad with Meyer Lemon Vinaigrette will take you right through Summer. Dare I say BEST salad recipe on the blog! If you missed my Spaghetti Squash Quiche from yesterday, head over and check it out. It made wonderful leftovers for lunch yesterday.

I wrote a post all about how to use Ziplist. I’m really excited about partnering with Ziplist. It’s a great resource for foodies and I hope lots of readers will take advantage of all that Ziplist has to offer. My Fit Tip Tuesday posts were Increase that Incline, Tips for Spring Cleaning your Diet and The Importance of Me Time. The benefits of using incline on the treadmill are well worth the added pain. ;)

  1. You definitely had a delicious month this year, girl! And congrats on tackling more savoury recipes! That’s been a goal of mine for a few months now, buuuuuut I think I’ve kind of given up on trying to make it happen. What can I say? I just have a way bigger sweet tooth ;)

  2. Wow Kim, it’a amazing how many delicious recipes you created!! I always have to remind myself to make more savory recipes – putting together sweet stuff is just more fun :-)
    April is a new start for me on the private level and I look forward to it. The weather is already paying the game, as we have glorious 18°C and sun!
