And just like that, it’s Saturday. Happy weekend to you! I hope that each and every one of you have a lovely weekend planned. I don’t have anything too crazy planned, but it’s a three-day weekend, so that right there takes this weekend to the next level. ;)  I would love to go see one of the new movies out. There are so many that look so good…. American Hustle, Wolf of Wall Street, The Secret Life of Walter Mitty and August: Osage County; just to name a few. Do any of you have recommendations? Anyway, on to the food…..

Almond Butter Snack Balls

If you’ve been reading the blog very long, then you know how much I love date and nut snack balls. I mean what’s there not to love; they’re portable, tasty, just the right size and (when made right) a really healthy snack. I know sometimes I tend to exaggerate when it comes to delicious foods, but I promise these Almond Butter Snack Balls are my favorite snack ball recipe yet. They’re also probably the easiest with very few ingredients and just super yummy!

Almond Butter Snack Balls

Prep Time: 15 minutes

Yield: 16-18 balls

Almond Butter Snack Balls

Healthy snacks using all "real-food" ingredients with a taste very similar to cookie dough.

Ingredients

  • 1/4 cup raw almonds
  • 2 cups Medjool dates, pitted (Medjool dates are larger and will work much better)
  • 1/4 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 cup (heaping) raw almond butter

Instructions

  • Use a food processor or high-speed blender to grind raw almonds. Process until almonds become crumbs, but not flour-like.
  • Add in all other ingredients and process until fully combined.
  • Press and shape mixture into balls.
  • Store in a sealed container or baggie in the fridge for several weeks.

Almond Butter Snack Balls

I try to make a batch of snack balls every weekend for the week ahead. They are a healthy after school snack that my kids will actually gladly eat. Their favorite is the Sunpower Crunch Ball. I know you guys love snack balls as much as I do because one of the most popular recipes on the blog is the Paleo Snack Balls. Other favorites are the Sunflower & Hemp Seed Balls, Chocolate Cranberry Pecan Crunch Balls and Pumpkin Power Balls.

  1. Those Almond Butter Snack Balls look look really easy and healthy. I might have to try this! My husband and I saw Her last night and were kind of bored. It had it’s moments though. I highly recommend the Secret Life of Walter Mitty – very inspirational and feel good. We also watched Lone Survivor which was incredible (thank you military)! Have a wonderful weekend!

  7. I have never made snack balls…but I WANT to make snack balls now! I’ve never worked with dates…what kind of flavor do they provide? I would love to try any of these…I need snacks to keep at work, and these seem so much more wholesome and inexpensive!

    • Dates are wonderful. They naturally sweeten things up. The flavor is hard to describe…. they’re definitely sweet and kind of remind me of a dried fig. be sure to try to get Medjool dates. They are larger and softer and work best for this type of recipe. They are sometimes located in the produce section of your grocery store.
