Healthier Monster Granola Bars and The Girl You Left Behind

Happy Monday, everyone! I’m linking up with The Healthy Diva and Marvelous in my Monday, to bring you two marvelous things.

First up, a yummy granola bar recipe! Now that we’re back in a normal routine, going to work and school, I’m trying to pack healthier snacks for the kiddos. These are fairly healthy, but do have M&M’s to make things a little more fun. I honestly think these would be almost just as tasty without the M&M’s, though. However if you ask the kids, I’m sure they’ll disagree ;)

Healthier Monster Granola Bars

Prep Time: 10 minutes

Cook Time: 20 minutes

Yield: 12 to 16 bars, depending on size

Healthier Monster Granola Bars

So easy and so yummy!

Ingredients

  • 2.5 cups rolled oats (gluten-free, if needed)
  • 3/4 cup corn Chex cereal, slightly smashed (any cereal works, pretzels would be good too)
  • 1/4 cup ground flax
  • 3/4 cup almond butter (any nut or seed butter will work)
  • 1/2 cup honey
  • 1 egg
  • 1 cup m&ms, or desired amount

Instructions

  • Preheat oven to 350 degrees F. and prepare an 8x8 inch baking pan with a natural cooking spray.
  • Combine all ingredients in a large bowl. Transfer mixture to baking pan. Bake for 20 minutes at 350 degrees F.
  • Allow bars to cool completely before cutting. Enjoy.... I know you will!

Now let’s talk about something else, very marvelous. This past weekend I finished the book, The Girl You Left Behind, by Jojo Moyes.  This is the same author that wrote the book, Me Before You. I loved Me Before You so much that I wanted to check out Jojo’s other novels.

A review of The Girl You Left Behind | Hungry Healthy Girl

The Girl You Left Behind definitely did not disappoint! This book is like two stories melded into one. The first part starts out in France in 1916, during World War I. A young woman, Sophie, is left behind in a small French town that has been occupied by Germans, after her husband has gone off to war. A painting of Sophie that her husband painted catches the attention of one of the German soldiers. As his obsession deepens, Sophie will risk everything to be with her husband again. The story then jumps to present time; where Liv is trying to get over the death of her young husband. Her most beloved belonging is the painting that he bought for her several years prior. The painting links the two women, with many twists and turns.

This book kept my interest with it’s many surprises. I really liked that I was never able to fully predict what would happen next or how the story would end. If you’re a fan of historical fiction and even if you’re not, this book is a must read.

My plan was to read another book by Moyes, but after logging onto audible.com, I came across The Invention of Wings, by Sue Monk Kidd. This is the current selection from Oprah’s book club and the reviews were great, so I decided to give it a try. It is by the same author who wrote The Secret Life of Bees; which I loved.

    I’ve not read either of those books but both sound interesting. I’m reading a Jodi Piccoult book at the moment called Second Glance which is ok but not my fav book she’s written.

  7. The combination of oats, AB, and honey is the key to my heart — so good! And since I was away on a snowboarding trip all weekend, I’m kind of just looking forward to catching up on my to-do list this week. I didn’t get much done while I was gone, so it’ll be nice to finally start crossing things off that list <– seriously the best part of making lists.

  10. I haven’t read either of those books but I love historical fiction stories like that where they bounce back and forth. I just finished the book “Orphan Train” and I bet you’d love it!
