Homemade Snickerdoodle Larabars

Happy Monday! I hope everyone had a wonderful weekend and you’re ready start this week off with a bang!

I’ve been trying to get my hands on the seasonal Snickerdoodle Larabars ever since I saw them pop up on someone’s blog {I can’t remember who’s}. You guys know what a HUGE Snickerdoodle fan I am!! Every time I’m in the grocery store I’m on the lookout for these little suckers, but no such luck. They just don’t seem to be available in my area. It sure is a good thing that they’re super easy to make, though!


They’ve actually been on my “to make” list for awhile. This weekend I finally decided to make some time, even though they only take about 10-15 minutes to make, cut and store. Not too shabby! These have a lovely Snickerdoodle flavor and I love having them around for a quick grab-n-go snack.

Homemade Snickerdoodle Larabars

Total Time: PT10-15 M

Yield: 9 bars

Homemade Snickerdoodle Larabars

The flavor of snickerdoodle in a healthy date nut bar.


  • 15 Medjool dates, pitted (Medjool dates work best because they are big)
  • 1.5 cups raw cashew pieces
  • 1/2 cup raw almonds
  • 1/4 teaspoon sea salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla


  • Grind dates in a high-speed food processor for about 1 minute. Transfer ground dates to a small bowl and set aside.
  • Grind cashews and almonds in a high-speed processor for about 30 seconds. Don't grind completely into flour.
  • Add dates, salt, cinnamon and vanilla into the bowl of the food processor with nuts. Grind until all ingredients are well combined, about 1-2 minutes.
  • Pour this crumbly mixture onto a flat surface and press with your fingers into a square or rectangular shape.
  • Cut with a knife or pizza cutter into 9 rectangular bars. Store in the fridge. After being stored in the fridge for about 30 minutes bars will become more sturdy.

  1. I’ve never had a Larabar before or a Snickerdoodle for that matter but both sound delicious, as does your recipe. My stomach doesn’t do great with too much dates I’ve discovered recently, it always gives me really bad stomach pains so don’t know that I should make your recipe even though I want to as it sounds yum.
