Hope everyone’s weekend is going great! Yesterday was grocery haul day for me. Some bad news and some good news…..
First, for the bad news…..
No delicata squash at Trader Joe’s and no delicata squash at Sprouts. You just don’t know how disappointed I was…..a tear or two just may have been shed. I’ve pretty much become obsessed with these. I ate one everyday this past week and had some ideas for using them in recipes. Hopefully, I’ll have better luck next weekend.
Now, for the great news…..
The pumpkin butter is back at Trader Joe’s!!!!! This stuff is beyond delicious, so if you have a Trader Joe’s nearby, you have to give this stuff a try!
I was also able to stock up on organic pumpkin at Costco for all of my baking needs.
For my weekly meal, I’m linking up with Laura from Mommy Run Fast and Jill from Fitness, Healthy and Happiness.
My meal plan for this week is nothing too crazy because I didn’t get a chance to make some of the recipes that I had planned on from last week. I still need to make the Four Bean Quinoa Chili and the Turkey Piccata. I’m also planning a pumpkin chili. Hopefully, it turns out great and I’ll be posting the recipe on the blog. And if I have time this week, I really want to try Amanda’s pumpkin chili Mexican scramble.
I plan to stick with green smoothies for breakfast, especially during the week. These are so convenient for me to make right before I leave the house and then I can drink my breakfast on the way to work.
Lunches will be leftovers, soups or salads and snacks will be the usual baby carrots, raw almonds and/or apples.
Marathon Training Update (week 6):
Monday- rest (Madelyn had horse lessons after school.)
Tuesday- rest (Madelyn had horse lessons and Landen had gymnastics.)
Wednesday- Hills for 7 miles
Thursday- rest (Horse lessons and gymnastics again.)
Friday- rest (I don’t have a good excuse. I was just plum tired!)
Saturday- 7 miles and Body Pump
Sunday- 15 miles at a 9:58 pace
As you can see I’m missing a couple of days of running that my marathon plan suggests. At this point, I’m just going with the flow and hoping that getting in my long runs will make the difference.
