So not only were the Healthy Living Summit sessions incredible, the food was fabulous! I’m linking up with new mama and What I Ate Wednesday queen, Jenn from Peas and Crayons. Head on over to her blog for lots more delicious food posts!
I got in a 10 mile run before all of the festivities of HLS began and to fuel my run I had an unpictured banana and almond butter that I brought from home. It did the trick, but after my shower and getting spruced up for the day, I was more than ready for the yummy breakfast that was served to all of the HLS attendees.
I was so excited to see that the awesome people from Ninja blenders provided green smoothies and they were delish! I also had fruit and oatmeal with my almond butter. By the way, we were shown a demonstration of the new Ninja blender and it sounds pretty fantastic.
With all of the sponsors set up, there was no problem finding snacks. But the people from Blue Diamond so graciously provided us with a snack break that included Pesto Queso Fresco with Pumpkin Seeds, served with Blue Diamond crackers. This stuff was out of this world!
After attending a couple more sessions, it was lunchtime. I didn’t know what to expect for lunch and was thinking simple salads or sandwiches, but I was pleasantly surprised. The lunch that was served was right up my alley with plenty of choices. There was the option to do chicken, tofu or veggie fajitas and I just went with a big veggie chicken salad with salsa. I had been wanting to try tofu, so I had some on the side. Ehhh… I think I’ll stick with my chicken. They also had a build your own soup bar and your choice of churros or chocolate cake for dessert. I stuck with my salad to save room for all of the snacks that were around.
Sessions continued on after lunch and of course, the snacking continued on too. I think I’ve got enough Blue Diamond almonds, in every flavor you could ever want, to last me for a year! These blueberry ones are so tasty and I’ve since had the strawberry ones too and they’re so wonderful.
At the end of the day, the sponsors were begging us to take products. If only I wasn’t flying, I could have really stocked up! For dinner, Hannah and I met up with Danica, Emily, Kelsey and Laura and headed to The News Room. The meal was sensational and dare I say….. AMAZING! We had so much fun talking and laughing for hours!

I had the beet soup and beet salad. Can you say beet overload? No, it was so unique and wonderful. I definitely wish that we had The News Room down in Texas!
The icing on the cake was The-Pom-Ador, a pomegranate martini!
