Hi, lovelies! I hope everyone is having a wonderful weekend. I’ve had a great weekend. Last night, Brad and I FINALLY had a date night. We saw We’re the Millers and had dinner at our favorite local Italian restaurant. Today is all about the food prep and getting the kids ready to go back to school tomorrow. Since this next week will be our first week back-to-school; I decided to do some marathon food prepping.
Here’s what I’m cooking up for the week…..
cilantro jalapeno hummus for snacking on this week
I’m hoping to come up with two new dinner recipes. One will be a super simple crockpot chicken taco recipe and the other a quick chicken and rice skillet recipe. Both will have a southwestern flair, which in my opinion, is never a bad thing.
If I have time, I would also like to come up with a veggie burger recipe…..we’ll see how the day goes.
I’ve had cauliflower sitting in my fridge for what’s about to be too long, so I’m thinking about trying this roasted cauliflower “mashed potato” recipe out.
Week 1 marathon training update:
This week was my first week training for my 2nd marathon. I did realize one thing…. no running after eating dinner and in really humid weather…..4 miles felt more like 10!
Tuesday- 4 miles (10 min/mile)
Wednesday- 4 miles (hills)
Thursday- 4 miles (10 min/mile)
Saturday- 4 miles (10 min/mile) and Body Pump
Sunday- 9 miles (10 min/mile)
*The 10 minute mile is suggested at this point in my training. On most days, my average came out to more like 9:46/mile. I’m keeping it slow because I know what it’s like to be injured and I sure don’t want that. Also, according to the plan that I’m following, Thursday was supposed to be my rest day, but Friday was “meet the teacher night” so I had to be flexible. I’m sure that will be happening a lot.

Have you seen We’re the Millers? If you haven’t, you definitely need to!!! It was the BEST movie I’ve seen in a long time! HILARIOUS!
