Waffles for Mom

Mother’s Day is this weekend! Do you have big plans to make the day SUPER special for your mom? How about a Mother’s Day tradition? We have one in our family, that’s been going on for several years now and I’m really looking forward to it. Every Mother’s Day my mom, sister and I {my oldest daughter joined us last year and will this year} either go shopping or see a movie and go out for dinner. It’s always a really fun day to catch up and visit while doing something that we all enjoy….shopping!

If a Mother’s Day breakfast or brunch is on the agenda for your day, I have the perfect recipe for you. Big fluffy Belgium waffles are seriously this mother’s favorite breakfast food! There is just nothing like that sweet crispy outside and the soft warm inside of these healthified waffles. That’s right, they are actually healthy and good for you…no guilt on Mother’s Day. They are made with almond meal/flour and coconut flour and they’re Paleo and Gluten-free. The blueberries perfectly balance out the sweetness with a little tart and of course, add more nutrients. I would make them for myself to enjoy, but I actually made a big batch this past weekend and I’ve been eating them all week.

  1. I was actually planning on hosting a brunch for my mom this weekend, and waffles sound like a perfect addition to the menu. It’s been a while since I’ve made them because I usually opt for stuffed crepes, but it might just be time to bring out the old waffle maker again.

  2. Yum! I’ve never made waffles, but then again, I don’t own a waffle iron. I’ll be taking my mom out for brunch. I made reservations far ahead of time, and I’m glad I did because now they’re totally booked!

    PS – My fav way to enjoy oats are in protein oats. Yum!

  3. Oh my gosh Kim those look amazing and I’m not even a big waffle fan! I love blueberries and coconut! My hubby has brunch planned for Sunday with both our moms and SILS which should be fun! I’m mostly looking forward to a pedi tomorrow and a facial on Saturday!

  4. This sounds so good! It was just this year I was able to successfully make pancakes and now I think I need to get a waffle iron so I can make pancakes and waffles. Black grapes were on sale at the grocery store the other day, OMG so good!
