Meal Planning for an Easy Week

Today officially kicks off the start of my Spring Break!! I’m not planning on going out of town, but just hanging out and maybe doing some fun local stuff with the kids. I don’t want to do too much planning, but instead have an easy and carefree week. I may do some experimenting in the kitchen, but for the most part, I plan to make simple throw together meals. I’ll be using lean chicken or fish with brown rice or quinoa and various veggies thrown in to make super simple, quick and nutritious meals.

I do plan to prep a few meals, mainly for the hubby {he’ll still be working}. I definitely plan on making this easy Paleo and Gluten Free Pasta. It’s great to have around to eat on throughout the week and I haven’t made it in quite awhile.

Saturday- Eating out. Landen has a gymnastics meet this afternoon that’s about an hour-and-half away.

Sunday- We’ll most likely be home Sunday night. I’m planning to make Eggplant Stacks with ground turkey.

Monday- Alexis and I are going shopping, so no cooking for dinner. I’m sure we’ll grab something out.

Tuesday- I have a hair appointment in Fort Worth; which is pretty much an all day affair, so I’m planning an easy throw together meal.

Wednesday- Baked chicken….not sure how I’ll cook this and I’m also planning on experimenting with couscous. Hopefully, it will be blog worthy!

Thursday- Breakfast for dinner. I have ricotta to use up and I’ve really wanted to create a ricotta pancake recipe….we’ll see…..

Friday through Sunday- Winging it! Mine and Brad’s anniversary is on Tuesday, so we’ll probably go out Saturday and celebrate. I’ve also been wanting to try Tina’s sweet potato pizza crust and it would make a great weekend dinner.

My goal for grocery shopping this week is to cut down on buying snacks. I’m going to be home all week and I don’t want a bunch of tempting snacky food lying around.

  1. My spring break isn’t for a couple of weeks yet, but I’m looking forward to it already! I’m thinking of prepping a lot today and tomorrow for the week. Today slow cooker shredded chicken. We’ll have some for dinner tonight, and then I’ll use the rest for during the week. Tomorrow it might warm enough to grill!! So I’m thinking that bison burgers should be on the menu, and I’ll cook extra for the week. :)

  2. Happy Early anniversary to you and your hubby! I’m going to try to get some meal planning done today and shopping tomorrow. I miss Spring Break from when I was teaching! Even though I’m always on break now, it was always something to look forward to and a sign the end of the year was getting closer!

  3. Oh anniversary!! I hope you will have a great celebration!
    I love your meal plan ideas. I do meal planning and prepping every week, it gives me some relaxation time during my work week.
    Tonight I will be home and plan on a chicken frittata with asparagus, very simple. Tomorrow I redo a sweet potato torilla which I made this week for lunch and I want to make it blog-worthy!
    I baked your breakfast cookies today!! I adapted them a bit since I had no ricotta on hand, but they still tirned out delicious!

  4. Breakfast for dinner is one of my favorites! I do not know why I don’t think to make it more often. I need to add that to a future meal plan, but not for this week’s because I already have it all planned out. I am definitely a planner. Without a meal plan I would buy way more food at the grocery stores than I really need :( .

  5. I have been wanting to make Tina’s sweet potato pizza crust and cauliflower pizza crust! They both sound so good! Breakfast for dinner is always a great choice! I’m sure you could use the ricotta just like you would greek yogurt.

  6. Haven’t made a meal plan for this week but have some meals in mind. We don’t have spring break here in Australia but are enjoying a nice long weekend and some warm weather :)
