Veggie Burgers and Funny Stuff

Hi guys!

How is everyone’s weekend going? Mine is going pretty good. Nothing too exciting, but hey it’s the weekend and that’s reason enough to be excited.

My two sweet nieces spent the day and night with us; which was fun, but made for a busy evening. I did make time for a nail appointment and the grocery store, of course.

I also made the veggie burgers that I was planning. They turned out GREAT! Brad approved and the recipe made such a large batch that it was like food prepping for the week without even trying. These will be great over my salads, for lunch, this week. I pretty much followed the recipe exactly how Jenn wrote it up. The only adaptations that I made: I didn’t pre-saute the veggies {that was an oopsie….I had already added the veggies in with the beans and then saw that I was supposed to saute them, but it turned out fine and saved time}, I used carrots instead of celery {I think celery is the only veggie I hate}, since I didn’t saute anything I didn’t use any oil, and I pureed my beans with veggies just a bit {it was about half-and-half…there were still some chunks of beans. I topped my veggie burger with ketchup, mustard and avocado and along side had roasted broccoli, Brussels and baked Alexia sweet potato fries.

Yesterday, I did this 30 minute at-home cardio workout. I added in some running and it ended up being a great workout that went by super fast. I ran for 10 minutes before starting the circuit, then did Circuit 1 and 2, ran another 10 minutes, did circuit 3 and 4, and finished up with another 10 minute run. Today the plan is to run 3 miles and then do a BodyPump class. I haven’t done BodyPump in over a month and I’ve really missed it.

  1. That is definitely one of my all time favorite dinners. I know that it seems very cliche since I am a vegetarian, but I must say that I truly LOVE veggie burgers, especially homemade ones! Yours looks fabulous and I love that you topped it with avocado. And of course, let us not forget how amazing brussel sprouts and sweet potato fries are! You can come cook that meal for me any day! ;)

  4. Yum those burgers do look good! I had a vegie burger on Saturday and that along with your post makes me want to give them a try.
