An oldie, but a goodie! It’s been awhile since I had my Paleo Pumpkin Scramble. I had some leftover roasted butternut squash that I roasted up on food prep Sunday, so I used a 1/2 cup of mashed up butternut squash in place of the pumpkin. It was delish topped with Snickerdoodle Cashew Butter and blueberries! Also, between the hours of 5:00 and 7:00, I was sure to down two large cups of donut house coffee…that’s the way to start the day!
10:00- Snack
A long meeting delayed my banana snack. I brought the other half of the banana that I used in the Scramble. Just a little something to tide me over until lunch!
11:45- Lunch
Lunch was a quite a beast of a salad, if I do say so! In the bowl went mixed greens, TJ’s mixed medley cherry tomatoes, broccoli, rotiserrie chicken, butternut squash, TJ’s lentils and topped with one of my favorite dressings {Cilantro Dressing from Trader Joe’s- in the produce section}. I have been loving the lentils to top my salads, lately. They are already cooked and ready to go. You can find them in the produce section, near the hummus and dips.
3:30- Snack
After school, Madelyn had horse lessons and I ate this organic apple on the way to lessons. No nutbutter….aren’t you proud of me?
6:00- Dinner
As always, Tuesday is gymnastics night. Landen practices from 6-8….sometimes I bring food from home and sometimes we pick something up. The last few weeks, I’ve been really good about bringing food from home, but decided to make things super easy tonight and pick something up….. plus I really had a craving for Which Which! I had a black bean patty on wheat bread with spinach, mushrooms, tomatoes, olives, and feta. On the side, two cuties, of course.
9:15- Dessert
I had a little dessert of TJ’s fat-free frozen Greek yogurt topped with Chia Seed Peanut Butter Oat Cookie crumbles. Perfect way to end the evening!
Something to think about…..
How many snacks do you eat a day? During the week, I pretty much always have two snacks because I have breakfast so early. On the weekends, I sometimes only have one, but usually make up for the other snack with a dessert. I tend to splurge more on the weekends. What about you?
What was one of your delicious eats from yesterday or today?
Do you end your evening with a little before bed dessert? I don’t always, but with cookies in the house you can pretty much bet I’m having dessert!

That pumpkin scramble looks delicious as does those cookies. I’ve just started using Chia seeds in everything possible. Not sure I could make a batch a cookies and be disciplined not to eat the whole batch but definitely want to give those a go.
I tend to snack more during the week than weekends, I think when I’m at work it helps to break up my day. I prefer smaller snacks for morning and afternoon tea so I can still have a healthy dessert

Love monster salads like yours. I find that those type of salads always fill me up better than say eggs or a sandwich. Is it just me?? lol.
I’m not sure if you consider my meal #2 & #4 snacks, but that’s what I consider my snacks. and of course I always have a dessert before bed… doesn’t even matter if I’m hung or not

Bananas make for the best mid-morning snack! I really need to get to Which Wich now that I have moved to a city that has one. I love that they have vegetarian options, and that sandwich looks awfully tasty!

I usually do two snacks a day too! I would so much rather eat smaller meals with snacks throughout the day than 3 square meals! Keeps me going for longer this way! Everything looks great especially that paleo scramble. I can’t believe I have yet to try one!

I am the same, I normally have two snacks, unless I have to postpone a meal due to a work out then I might squeeze in 3! I always like something sweet to finish my dinner, sometimes it’s just mint tea, sometimes it’s cake like this WIAW! Your breakfast looks amazing, I’m pinning it now!

During the week I have 1 or 2 snacks a day. During the weekends though I just tend to graze because I’m home, with a kitchen, and thus have access to way more food!

I mostly have a snack in the morning but I can be without a midafternoon snack. Weekends are different, sometimes only 2 meals since I try to sleep in

I’ve been seeing that cilantro salad dressing on a few different blogs- it’s on my “must pick up during my next trip to TJ’s” list (which is getting pretty long considering the closest TJ’s to me is 4 hours away!) Can’t wait to try it out
I’m actually a pretty big serial snacker. I never do less than 3, and sometimes I’ll actually just snack the day away and end up eating around 10 of them instead of any legitimate meals. It’s a habit that I’ve kind of been trying to get away from, but at the same time it’s how I’ve been for as long as I can remember so I guess I’ll just go with the flow.

I also tend to have 2 snacks a day during the week—one of them is usually dessert, even if it’s something healthy. Lately, I’m loving sliced banana with either peanut butter or non-fat ricotta.

Love Paleo scrambles! I made one with sweet potatoes the other day instead of bananas or pumpkin and it was delicious! The cookies sound great! I just stocked up on Chia seeds too

I have usually a morning snack and an afternoon snack. Sometimes a small one after dinner if I get hungry, but sometimes not. It also depends on how active my workouts are.
Today I made the most fantastic blueberry oatmeal pancakes, topped with mashed banana and drizzled almond butter. OMG, seriously one of the best breakfasts I’ve had in weeks!

I am pro-snacking! I seem to snack more than have a proper lunch during the week and then weekends snack less since i have more of a bigger brunch later in the morning.
