Get Your Food Prep On!!

Hi guys! Hope your weekend is off to a great start! I’ve got Madelyn’s big dance competition that I’m headed off to, this morning. It should be a fun, but busy day, so let’s get to it!

I try to use one day of the weekend to prepare lots of goodies for the upcoming week and lately, there’s lots of blog talk going on about food prep. Do you prep your food for the week? Sometimes I do and sometimes I don’t, but I will tell you that it is much easier to make good decisions when you have healthy choices already prepared and ready to go.

Last weekend, I did a major food prep session and I’ll tell you; it has been so nice to not have to worry about what to make for breakfast, lunch and dinner.

Let’s start with breakfast. I’ve had an early morning meeting almost everyday this week, so having my Banana Blueberry Steel Cut Oats that I cooked in the slow cooker has been so convenient. Having oats ready to pop in the microwave, has literally made breakfast take about 2 minutes to fix.

The slow cooker helped me out with lunch and dinner too. I will be posting the recipe for this Southwest Chili next week and let me tell you, it was one of my favorite chilis ever. This was dinner for one night and lunch for a couple of days.

Food prep also included some snacky foods and side foods. I love making my own nutbutter and I experimented last weekend with a new flavor and used sunflower seeds, cocoa, honey and a little coconut oil. Recipe soon to come!

I roasted my veggies with some of Trader Joe’s Everyday Seasoning and a little salt and pepper. I typically roast my veggies at 415 degrees F for about 25 minutes.

I also made a batch of my Paleo Pumpkin Muffins to have on hand for snacks. I had forgotten how much I love these. I stored them in the fridge and they’re actually really great straight out of the fridge and less crumbly that way.

  1. Food prep is a life saver, right?!? Every Sunday, I prep all my lunches for the work-week. It saves so much time, and then I’m guaranteed a healthy lunch since it’s all ready to go. I put together 5 salads, make a jar of salad dressing, and make sure I have 5 protein options to either add to the salad later, or eat on the side. Have a great day!

  2. I food prep on Sundays! Your southwest chilli looks amazing and something I might need to add to my dinner menu this week!! I can’t wait for the recipe!! My daughter and I always try to bake something at least once during the weekend… usually a healthy muffin or a granola bar! Have a great day

    • The chili recipe is up! My daughter and I love baking over the weekend too. I’m thinking about cookies for this weekend….I haven’t had any since Christmas and my sweet tooth is telling me I NEED some. ;)

  3. I like to do foodprep, even though I don’t prep everything so I have a little space for a spontaneous craving :-) but I usually prep pancakes for breakfast, chicken-broccoli-meatloaf for lunch or dinner and a big batch of quinoa. Happy Weekend!!

  4. You know I love my food prep! One thing I’ve learned I need to prep ahead is veggies because if they’re not already cooked I just won’t eat them during the week!

    • Believe me I run into the problem of not having enough space! I keep telling my husband we need a 2nd fridge out in the garage! ;)

  7. After Lindsays post I did some food prep last weekend and it made such a difference when I was looking for food to eat throughout the week. Coming home form work and having fresh roasted veggies and hard boilled eggs is a much better snack than many other unhealthy snack type foods I could have had.

  8. All the food prep bombardment has finally kicked me in the butt to start meal planning and frankly, I’m very glad it occurred. It’s a whole lot easier to make a healthy plan and follow it then to come up with a healthy meal after a long day with the random fridge contents.
