What I Ate Wednesday! Veggie Love Edition!

Hi guys! How’s everyone’s week shaping up? Nothing too exciting here, but I can’t complain….so far, so good!

Tuesday morning was very challenging! Why, you ask?!?! I was fasting and could not have my breakfast or coffee at the times that I normally would. This was way more difficult than I thought it would be. I drove to work feeling like a zombie. Every year the school offers free cholesterol and blood sugar testing along with a blood pressure check. I like having this checked every other year….it’s always good to have a baseline in case something goes crazy. All of my numbers were great!

Anyway, breakfast happened about 3.5 hours after being awake…you nonbreakfast people, I don’t know how you do it. Overnight oats and coffee never tasted so good!! I used this recipe and Chobani Champions Very Berry for my overnight oats and then added PB2 and blueberries to the mix.

No midmorning snack today, since breakfast was so late. Lunch was extra awesome! I made these Southwest Stuffed Bell Peppers Monday night and they truly surpassed my expectations {recipe to come soon}. I had a salad on the side with mixed greens, tomatoes, broccoli, kabocha squash and topped with TJ’s Everyday Seasoning and TJ’s Cilantro Lime dressing.

You guys know I never miss my afternoon snack of nutbutter and apple slices! Today’s variety was a Gala apple with crunchy Snickerdoodle Cashew Butter {the best!}. This is a recycled photo and I think this was my crunchy honey cinnamon peanut butter.

I worked late and before gymnastics, the kids and I headed to Wal-Mart to get all of our Valentine’s Day necessities. I picked up Subway for the kids, but not for me. No, I had my favorite Trader Joe’s premixed salad {Field Fresh Chopped Salad with Grilled White Chicken} waiting on me. I add more mixed greens to the salad to make it super filling. The dressing that comes with it {Sweet Basil Dressing} is to die for. I wish I could find just the dressing sold by itself. Excuse the recycled photo….yea….my salad did not expire in November. ;)

    Secret: I am not an eat breakfast right away person, and even I hate the fasting because it robs me of my morning cup of coffee. That’s awesome your company does those things.

  3. I’ve had to fast multiple times before surgeries… and just like you said, I’m not sure how non breakfast eaters do it. I was going crazy! .. and with that being said, yup, I’m definitely a breakfast person. I wake up almost every morning with a growling stomach :)

  4. I am totally a breakfast person! So much so that when I was pregnant and they wanted me to do the 3-hour fasting glucose test, I was completely nauseous, starving and light headed. The doctor had to allow me to eat something in order to be able to function. Pregnant or not, I MUST within an hour of being awake.

  5. Hope everything went well with your tests! Fasting is no fun. I completely agree with your statement about non-breakfast people. Crazy. All of them.

    I’ve had to fast quite of few times… 5 or so for surgeries. Then twice for a ultrasound. And then a fast/liquid thing for a colonoscopy/endoscopy. Oh my gosh was that awful.

    But anyways, I’m always starving after a fast. That oatmeal looks great and I bet it tasted like a million bucks! :)

  6. My compliments to the chef! Your food is so simple but so nourishing and delish! Just the way I love it!
    And I’m so not a breakfast person. I get up at 5-6am and start eating around 11-12. How do I do it? I truly don’t know – I was this way since childhood.
    Also I hope you are ok. Because judging from the way you eat – you must be!

  9. Fasting can be SO tough! For some reason, on the days when I can eat whenever I want, I am often not super hungry right away. However, on the days when I am told that I cannot eat, I am suddenly starving! I must not like people telling me what I can and cannot do! ;)

    I just ran out of PB2 and they were out at Whole Foods the last time that I went…I think it is a slight crisis :/ haha!

  12. I’m the same way, if were going out for later breakfast I still have to have a smoothie so I don’t get super mangry. I ave had to fast before, It was when I was younger and a doctor scheduled a bunch of tests on the same day, I can’t remember why I had to fast but I do remember I had to get blood drawn and fainted. So lesson for the future eat before getting your blood drawn if possible.

  14. Eek! Having to fast for blood work is the absolute worst! I have no idea how non-breakfast eaters do it either… I have to eat something pretty soon after waking up or I start feeling like I’m going to pass out. I’m glad to hear that all the numbers came out good, though! :D
