Happy Marvelous Monday to you!! Since I shared my Marvelous weekend with you yesterday, today I will be sharing a Marvelous recipe with you…..Pop Tarts!! And not just any Pop Tarts….homemade and healthified Pop Tarts that turned out fantastic!!
- 2 cups whole wheat, whole wheat pastry or spelt flour, plus more for rolling out dough (I used whole wheat pastry flour.)
- ½ tsp salt
- 1 tsp cinnamon, plus more for sprinkling on top
- 4 tbsp baking stevia, plus more for sprinkling on top (optional, any other sugar or sugar substitute should work)
- ¼ cup coconut oil, unmelted and hardened
- ⅓ cup ice cold water
- ¼ cup Greek yogurt (I used Blueberry Chobani.)
- 1 egg, for brushing over the Pop Tart before baking
- Filling: jam or other creation
- Preheat oven to 375 degrees F and line a large baking sheet with parchement paper.
- Put flour, salt, cinnamon, and stevia into bowl of food processor and pulse together.
- Meanwhile put ⅓ cup cold water into the fridge.
- Cut coconut oil into chunks, spread out over the flour mixture and add yogurt.
- Turn on the processor and blend until mixture is crumbly. While the food processor is still on, add cold water through the top. Dough should form into a ball.
- Remove the dough from the food processor and put it on a lightly floured counter, and also, lightly flour a rolling pin. Roll dough out flat, thin, and shape into a square or rectangle (if dough is too thick, the pop tart will be doughy) no more than ¼” thick.
- Trim uneven edges and use a knife or a pizza cutter to cut out about 14 rectangles or any other shape you prefer. Lay half of the dough shapes onto the baking sheet and make sure you have a matching piece of dough set aside for each bottom.
- Spoon out about 1 tbsp or so of filling (jam or other creation) and spread over bottom half of Pop Tart.
- Top with matching dough shape and seal around the edges by pressing the tip of a fork around the sides. Make a few holes in the top with the fork. Brush the tops with egg wash and sprinkle stevia or sugar and cinnamon over the top.
- Bake for about 20 mins or until golden brown.
- Add a glaze or topping, if desired. Honey, nutbutter and/or yogurt all make fabulous toppings.
I used several different filling varieties and I haven’t tried the one with strawberry jam yet, but all of the others were very good.
- Strawberry Jam- I used Trader Joe’s.
- Cinnamon & Brown Sugar Applesauce- 2 tbsp applesauce, 1/4 tsp cinnamon, 1 tsp brown sugar
- Blueberry Yogurt- Chobani Blueberry Greek Yogurt with a few blueberries
- Cocoa Banana Nutbutter- 1/4 of a mashed banana, 1 tsp cocoa, 1 tsp nutbutter
The options are endless….use your imagination!
I probably added a bit too much filling to my Pop Tarts because once I went to smash the top to the bottom; some of the filling seaped out. If any of your filling seaps out just wipe away any excess filling before putting your Pop Tarts in the oven.
I would definitely recommend topping your Pop-tarts with something sweet. The crust is not very sweet and so I enjoyed mine with a little drizzle of honey. I also tasted a few bites with nutbutter and, of course, it was yummy. I’m sure a topping of Chobani would also be fabulous! I didn’t make a glaze, but there are tons of recipes for healthy glazes on the web. I especially like this healthified glaze from Katie.
