TGIF!! Due to my work trip, I only had a 3-day work week, but honestly it didn’t feel much shorter. This weekend should be pretty low-key…..thank goodness. Madelyn is spending the night with a friend tonight and Landen is going to the TCU basketball game for a friend’s b-day tomorrow. Madelyn has dance on Sunday and I will definitely be making time to stock up on groceries and get my workout in.
When I go to the grocery store this weekend, I will have Valentine’s Day on my mind. I always like making a special dessert and dinner for the fam.
Today I’m sharing some of my ideas with you!
Let’s start with breakfast…..
Well, I know you’re definitely going to want to make my “beet” red Valentine Pancakes.
Just in case you don’t want to go the pancake route; how about eggs and toast “Valentine’s Day Style”!
Or a heart-shaped fritatta made in a heart-shaped cupcake pan?….Love this!
If you’re packing a child’s lunch or even your hubby’s lunch…..or, heck, even your lunch; be sure to include these……
or heart-shaped sandwiches
And onto dinner…..you can do more of a romantic meal with this quick and easy shrimp florentine pasta.
Or a fun and festive dinner with make-your-own personal heart-shaped pizzas. I’m seriously considering these and may pick up Trader Joe’s refrigerated dough this weekend, to make things easier. The kids would have so much fun creating their very own pizzas!
Last, but definitely not least…what would Valentine’s Day be without a sweet treat?
I will most likely be making a giant flour-less cookie into a heart shape. I’ve been making this for a couple of years…it’s healthy and the kids love these giant cookies!
Cheesecake just screams Valentine’s Day to me and this cheesecake is healthified with Chobani black cherry Greek yogurt rather than using cream cheese. I’ve actually made this Chobani Black Cherry Cheesecake before with my almond crust and loved it. The texture is a little different from the average cheesecake, but it’s still wonderful.
And if you’re looking to get your chocolate fix in…..I think this heart-healthy Coffee Cinnamon Walnut Brownie Cake would be fabulous cooked in a heart-shaped baking dish.
Paleo or not, these Paleo Sugar Cookies look like a must make for any holiday. I just love sugar cookies with icing!!

What an awesome post full of creative ideas! I especially love the heart-shaped pizzas and the egg and toast idea. Both are so cute! I am fairly certain that the cuteness of them would also make them taste extra good!

I don’t have any special plans as of yet, but I’ll definitely me making some dessert. Right now I’m thinking it’ll be heart shaped shortbread cookies dipped in chocolate and sprinkles, but that could always change.
