Happy What I Ate Wednesday this past week! As you guys know, I’ve been in Houston with coworkers; attending a conference. These are coworkers that would think I had completely lost my marbles if I was taking pictures of all of my meals. I know you’ll understand…. some people just don’t get it.
I just have to share a picture with you that Brad texted me of Max….he’s waiting for his mamma to get home. Brad said that he pretty much stayed by the window the whole time I was gone. When I got home last night, there was no shortage of snuggling!
So, I decided this would be the perfect week to change things up. I’ve had some pretty great meals over the past week and I’m going to share with you some of my favorites {collage style}. Enjoy!!
You guys know breakfast is my VERY favorite meal and I could probably eat breakfast for every meal of the day. Here’s a few that I’ve had this past week…all delicious!
The past week, I made Eggy Banana Oats and Voluminous Snickerdoodle Oats for the first time. The Beet Pancake recipe is perfect for Valentine’s Day style! and for the Oatmeal Blueberry Pancake see below.
Oatmeal Blueberry Pancake {serves one}
1/2 cup rolled oats
1/2 cup egg whites (from 3 eggs)
1/4 tsp baking powder
1 tsp cinnamon
1 tsp vanilla
1/2 cup frozen or fresh blueberries (optional)
1 stevia packet or 1 tsp honey (optional)
Mix all of the ingredients together and cook over medium to high heat, flipping after several minutes of cooking on each side. I used two spatulas to flip my pancake. Top with your favorites!
Lunches have been pretty simple this week; like leftovers or Kashi frozen meals with extra veggies on the side. Snacks have also been pretty simple, as always. I’ve either had bars, Chobani or apple slices with almond butter. Oh and I can’t forget….I’ve been loving my new carrot cake Vita Tops!
This was a throw together dinner that we had one night last week and it doesn’t look like anything special, but it was super tasty. The tilapia is from Costco and it’s preseasoned with all-natural ingredients; olive oil, basil, and garlic. Along the side I had a sweet potato, salad and that triangular thing is a ravioli. The kids had ravioli and I had to have just one. Other dinners included Sneaky Meatball Subs, stuffed kabocha squash with chicken tortilla soup from Costco and Greek yogurt, salads are always on the menu and Saturday was Mexican food at Gloria’s {my favorite}.

Everything looks amazing. I still can’t get over how delicious snickerdoodle oats sounds! How cute is Max?! I bet he was so happy to see his momma home!
I TOTALLY get it. There are definitely only certain people who I will take pictures of food around. I don’t want people to think I am too crazy. But then again, most of them read my blog…so I don’t know how else they think I get the pictures of my food from restaurants

And that is such a cute picture of your dog Max. I’m in the same boat with my dog Lilly. When I come home for the weekend there is a plethora of “kisses” and we have one hyper dog on our hands.

They really don’t fall apart easily, but it was kind of big, so I used two spatulas. Hope your day was great!
That’s my favorite Larabar flavor! Coconut Creme is delicious. And stuffed kabocha squash–one of my favorite vegetables ever. The best thing I’ve eaten this week was the raw apple pie I blogged about. Mmmmm . . . so good!

I’m trying the pancakes! I love recipes that use things already in my house. The best!
I can’t think of a fave meal, I pretty much stick to the basics. Like sweet pitatoes and tilapia.
But I did make some yummy treats.
I don’t really eat out so my Mexican food is made at home.

Awwr that picture of Max! Dogs are just absolutely amazing <3 And speaking of amazing… you've definitely had a good week of eats! Loving all the breakfasts, and Mexican food is absolutely to die for. When I go out to eat, it's usually to Chipotle, and I order a chicken burrito bowl with brown rice, black beans, guac, salsa, and cheese. Heavenly.

I’d say you’ve had some pretty awesome and delicious looking meals! I still can’t get over how amazing the meatball sub looks! I need to make a sticky note or something to remind myself about them for a dinner idea.
For the most part at a Mexican restaurant, I down my weight in chips & salsa and then end up having a Mexican chicken salad.
My favorite meal this week was probably the burrito bowl from Chipotle I had and the raw vegan chocolate energy balls I made for the first time on Tuesdday. When it comes to Mexican, I’m all about either a veggie burrito with lots of black beans and rice or eating all the goods with tortilla chips! Yum! And I love guacamole!
