Pancakes for your Valentine

Hi all! Any special Valentine’s Day plans yet? We usually don’t do anything all that special for Valentine’s Day around here, but I do usually make special treats for the kids and I usually try to prepare a special dinner, that I know everyone will LOVE.

An extra special breakfast is the perfect way to start Valentine’s Day or any day for that matter! Not only are these pancakes SUPER festive for your sweetie, but they’re also SUPER nutritious! The bright red hue comes from the one and only….. beets.

Pancakes for your Valentine

Serves: 3-4
 

Ingredients
  • ¼ cup beet puree (to make beet puree- roast a small beet (wrapped in foil) for 60 mins at 400 F and then puree in a food processor)
  • ½ cup cottage cheese (yogurt would probably work too)
  • ¾ cup unsweetened vanilla almond milk (any milk or water will work)
  • 2 tsp pure vanilla extract
  • 1 heaping tsp cinnamon
  • 1 tbsp pure honey (local, if possible) (optional)
  • 1 cup pancake mix (I use Kodiak Cake Mix.)
  • Toppings; such as fruit, maple syrup, and powdered sugar

Instructions
  1. Heat a griddle or large skillet over medium to high heat and spray with natural cooking spray.
  2. Combine the first six ingredients; beet puree through honey (if using) in a large bowl.
  3. Stir in the pancake mix.
  4. Drop desired size spoonfuls of batter onto skillet. To make a heart-shaped pancake, I used a large heart cookie cutter. I put the cookie cutter down on the skillet and spooned the batter into the cookie cutter and then removed the cookie cutter to finish cooking the pancakes (a few minutes on each side).
  5. Top with desired toppings.

  2. When you posted a picture of these pancakes a few days back I never ever would have guessed that they were made with beets. I have never cooked with beets, let alone baked with them. They have always intimidated me for some reason. This recipe is definitely changing my mind, though. I will have to make my first beets experience be something creative, like these pancakes. Thanks for sharing this unique and cute idea :) .

    • Beets are a little different to work with. I also like sliced roasted beets in my salad. Just watch your hands….they can be pretty messy!

  3. I’ve never cooked with beets either, but I think this might just be the way to start. They really are so cute for Valentine’s Day!

  4. Okay–these are cutest pancakes. I love the beet addition in order to make them red. Too cute! I’m not a huge pancake person, but my husband enjoys them once in awhile so I keep a box of Kodiak Cakes on hand. They are really good, and you can’t “beet” the ingredient list. lol. I crack myself up.

I like to do something special for Valentine’s Day, but that’s mostly because I’ll use any excuse to make a day feel more special, and I think that a cute pancake breakfast is a perfect way to start the day :D I have to admit that I’ve never thought to incorporate beets into breakfast (my favorite way to eat them is in soup), but I love the healthier alternative to using food coloring!
