still managing some pretty good eats

Well hello there! It’s hump day and you know what that means….let’s take a look at what I ate Wednesday Tuesday! Thanks, Jenn, for hosting! You guys be sure to head on over to peasandcrayons.com for some other delicious eats!

Well I have to say, Tuesday was a pretty darn crappy day. I know everyone has those days where nothing seems to go your way and you just want to go home get in your pjs, wrap up in your blanket and go to bed. Yesterday was that day for me, but in spite of it all I still managed to have some pretty good food to help raise my spirits a bit. Enough of that. Time to be positive and optimistic, today WILL be a much better day!

Let’s get on with why you’re really here…..the food…..

My morning actually started out pretty good. While getting ready for work, I enjoyed my first cup of coffee, as always.

Breakfast was super delicious! You know how I love me some pancakes and you can’t go wrong with RED pancakes. I topped my Beet Cakes {recipe to come} with blueberries, cashew butter, pom seeds and a little drizzle of maple syrup. On the side, I had some cottage cheese, a clementine and some blackberries. Perfect way to start the day!

So, I mentioned in the survey yesterday that I would be getting my squeaky breaks checked today. After I dropped the kids off at school, I headed to Firestone. Luckily, instead of having to wait over two hours at Firestone; they drove me to a nearby Starbucks so I could get some work done. I enjoyed a Kind bar while working. And by the way the blueberry pecan is awesome. I’m glad the bar was great because the whole break experience ruined my day. :(

Lunch was leftovers… Half of a meatball sub and Brussels sprouts with a little kabocha.

Monday night I made Kristen’s (from iowagirleats.com) Sneaky Meatball Subs. These sub sandwiches were delish and so easy….you pretty much just throw everything into the food processor. The picture above is beyond hideous, so here’s what it looked like Monday night.

The usual for snack…. I’m out of all of my homemade nutbutters, so it was chocolate PB2 to the rescue. This is a recycled photo and I don’t think that is PB2.

Dinner was this salad repeated. I love it because not only is it super tasty, but it keeps me so full. In the bowl is mixed greens, kabocha squash, pom seeds, and in my salad from today I also added broccoli and cherry tomatoes.

And now to put this day to rest and off to bed I go!

  3. I love Clinique make-up! It’s the only kind I use now because they always have awesome freebie sales going on when I go in to Macy’s to buy my face soap :)

  5. That sub looks awesome. I love making meatball subs, except I use vegetarian meatballs. Just as good, in my opinion! :)

    The best thing I ate yesterday was a Vietnamese Banh Mi inspired sandwich, which I will be posting about on my blog soon. It was SO good. I cannot wait until lunch today when I get to eat the leftovers :)

  6. The last time I had a Kind Bar, I wasn’t all that impressed. It was too sticky, sweet for my taste. I appreciate that they use good ingredients, though! Hope you have a better day today!

  9. Sorry to hear about the less-than-stellar day, Kim. My Tuesday was pretty decent, but I definitely had one of those funks on Monday. I hope today is going better for you! Something delicious from yesterday? Hmmm… I think it would be a tie between chocolate AB&J oatmeal and an English muffin topped with coconut butter and honey. Love my nut butters :D

  18. Sorry your day was less than optimal. My Monday was horrid… wish I hadn’t crawled out of bed that day. LOL I LOVE kabocha squash, so good!!! My day was pretty yummy too… I had Chinese food for dinner & enjoyed some fruity trail mix earlier, so good! Happy Wednesday!!
