I keep thinking of things I need to talk to ya’ll about, so grab your coffee or tea and let’s catch up.
First, I tried another Artisana nutbutter flavor. Yesterday, I received an Artisana sample pack in the mail with 5 of their new nutbutter flavors. Right away, I tried the Berry Antoxidant nutbutter and I liked it. Will I ever buy it? No, I prefer my nutbutter to have a nuttier flavor rather than a fruit flavor. Today, I tried the Blue Algae nutbutter with my apple slices. Let me tell you, this is not your average apple and nutbutter combo! It looks about as appetizing as you know what.
Definitely, won’t be buying this one! Three more sample to go….I’ll let ya’ll know.
Secondly, I want to share a very yummy low-calorie snack with you. This snack is inspired by the healthy snack queen, Kristin at stuftmama.com and her Cake Batter Cookie Dough Ice Cream. I adapted the recipe ever so slightly, using the ingredients that I had on hand. It turned out absolutely wonderful! {Her pictures are way better.}
Coconut Cookie Dough (serves one)
2 tablespoons coconut flour
1 Stevia packet
1/4 teaspoon vanilla
1/8 teaspoon baking powder
2 tablespoons unsweetened vanilla almond milk (I used Almond Breeze.)
Combine all ingredients, cover, and chill in the fridge for about 30 mins.
Banana Soft Serve (serves one)
1 cup unsweetened vanilla almond milk (I used Almond Breeze.)
1 Stevia packet
1/2 teaspoon vanilla extract
1/2 banana, frozen
Combine all ingredients, except the banana and pour into ice-cube trays or a baggie. Store mixture in the freezer for at least a couple of hours or until frozen. When you’re ready to eat; throw the frozen almond milk mixture, banana, and about 1/4 to 1/2 cup more almond milk in a blender or food processor and blend. Transfer soft serve to a bowl and top with the coconut cookie dough.
The third thing that I wanted to chat with ya’ll about is the cauliflower pizza crust recipe on the blog. I made the crust again this weekend, but added an extra egg to the crust mixture. It seemed to make the crust a little sturdier; so I’m going to edit the ingredient list and add the extra egg. After a reader made the crust, she shared a few great tips. She made the crust into several small crusts and baked them on a Silpat mat. After the crusts were cooked, she used two spatulas to slide them onto parchment paper to cool.
And last, but definitely not least…. It’s NATIONAL PEANUT BUTTER DAY! I know you will join me in celebrating this VERY important day!

I need to try stuftmama’s cookie dough and I’ve cream. I love cauli crust…I often use egg whites to make it sturdier without too eggy of a taste.

I love cauliflower pizza crust. I have only made it once so far, but have plans in the near future to make it again. Thanks for the tip about adding an extra egg. I will have to give that a try next time.

Today definitely isn’t a good one for those of us who are allergic to peanuts
Maybe I can celebrate with an extra spoonful of almond butter instead. And speaking of nut butters, those new ones from Artisana do sound pretty goofy. I generally like my nut butters to be pretty simple and taste like nuts, so I’m not sure I would enjoy them either.
