Party Time!!

Welcome to the party, friends…that is “the What I Ate Wednesday Tuesday party”! Tuesday actually flew by for me. After my two morning meetings, it was time for lunch and the rest of the afternoon went by in a flash. This is good and bad….work goes by really fast, but then I don’t feel like I got everything completed that I needed to. Anyway….it’s Wednesday, so let’s get on with it!

Breakfast is always my favorite meal and today was no exception. Donut House coffee courtesy of Green Mountain Coffee Company and a spin-off of my Paleo Pumpkin Pancake….the new Paleo Flax Pumpkin Pancake. I love how well this pancake cooks and there is no falling apart when I go to flip it. I love the new recipe so much, I’m posting it on my recipage, if you’d like a printable version, head on over to the link.

Of course, I enjoyed another cup of Donut House on my way to work.

I had to travel to another school for my second meeting and I enjoyed my favorite Larabar on the way. If you’ve never given Larabars a try, you definitely should. They tast wonderful and they have very ingredients, all of which are natural. For example, the coconut creme bar contains only dates, unsweetened coconut, almonds, cashews, and extra virgin coconut oil. I really need to try recreating these at home!

Lunch was leftover taco stuff from Monday night. I had lean ground beef, Chobani Greek yogurt, black olives, black refried beans, guacamole, and tomatoes on a flat-out. I know it’s not too pretty, but it sure was tasty!

After school, Madelyn had horse riding lessons and I had my usual snack of apple slices and almond butter. I sat outside and watched because the weather was gorgeous here in Texas today and is supposed to be beautiful all week. This was my view today….thought you’d probably rather see that than my countless pictures of apple slices. ;) {Madelyn’s in the purple.}

Next, we made our way to gymnastics. We brought food from home today…I had the last of the leftover crockpot lasagna with a salad. Nothing too exciting, but it did the trick. Sorry about the horrible lighting.

I topped my salad with this honey mustard from Annie’s and I have to say, I’m pretty happy with it. It’s not a thick honey mustard {which I prefer}, but it’s really tasty with just the right amount of sweetness.

Dessert was greatness!! My sample pack from Artisana came in the mail, so when I got home from gymnastics, I had to try one of the packets.

On top of Trader Joe’s Fat Free Greek Frozen Yogurt, I had crumbled Beet Paleo Brownie, raspberries, and Artisana’s new Berry Antioxidant nutbutter. It all went together perfectly and I’m glad that was the last of the frozen yogurt or I definitely would have had to go back for seconds. ;) Speaking of the Beet Paleo Brownie….I’m not so sure it’s blog worthy yet. It’s wonderful with ice cream, yogurt or nutbutter, but just the brownie is a bit dry….I’m sure due to the coconut flour.

Well, it’s 9:30, so I better get off here and get ready for bed. Hope everyone’s Wednesday is lovely!

  3. Your Paleo pancake looks awesome! Have you ever tried making the two-ingredient pancakes out of just egg and banana. I think flax is a good solution to those because they always fall apart :)

    And I was just thinking the same thing about the lara bars… Do you think that they would be cheaper homemade? At first I thought “duh” but then I got to thinking and good quality nuts and coconut could be expensive. Can’t wait to see what you come up with!

    • I have tried the two ingredient pancake and I really like it, but you’re right it doesn’t stay together very well. I was thinking that buying the ingredients for the homemade larabars may be about the same as just buying the bar. If I buy bulk from Costco, I may be able to lower the cost.

  5. That dessert looks amazing! I find when I bake with just coconut flour things come out drier. Try either cutting back on coconut flour, adding some liquid, or swapping it for some almond flour and you should have some more luck! Happy Wednesday!

  6. Yum! Great day of eats! Coconut flour is so tricky! I’ve been doing some experimenting lately as well and my end result is almost always too dry. I think doing half coconut flour and half almond meal helps some… I’ll have to try adding beets too! Great idea!

  8. A chocolate muffin/brownie/cookie crumbled over plain Greek yogurt is probably one of my favorite snacks ever. ll of your eats look super delicious, Kim! And I have to say that I’m really envious over your gorgeous weather as well! Currently drowning in snow and eagerly awaiting spring over here :)

  9. I really want to try those new Artisana butters! But we cant get them in the UK and it would mean Id have to order a whole box of 1 variety from iherb :( booo hoo! wish i could try them all!

  10. I really love Larabars. They are so delicious and the ingredient listings are absolutely fabulous. It is fun to feel like you are eating dessert without actually having to feel guilty about it. I actually have a Cherry Pie Larabar all packed and ready to go for a snack after work before I hit the gym. I am excited about it already! ;)

    Also, I happen to think that your lunch looks delicious. I love Mexican-inspired foods and Flat Out wraps, so it looks like a great combination.

  11. I had the Blue Algae PB and really disliked it. It was way too sweet and just off. But maybe some of the others are better

  12. That pancake is gorgeous! Checking out the recipe now… my sisters and I used to ride horses when we were little (we actually owned a few at one point) so those pictures bring back some memories. Just wait until Madelyn gets into horse shows (if she isn’t already…)!
