two hour delay & wiaw

Well, what do you know? I’m enjoying my SUPER delicious oat/egg white pancake {idea from Katie} and donut house coffee and my husband comes in from waking up asking if I’m going to work. What? Yes, I’m going to work…I’m all ready and I have way too much to do to miss work. Come to find out….while I’m getting all dolled up, it’s snow-sleeting outside. I did hear thunder, but tried to ignore it. About 5 minutes later, I get an automated call from the school saying that we’ve been delayed two hours. Luckily, I brought some work in last night, so now I get to enjoy my 2nd cup of coffee and work in my PJs. I’m a-ok with that!

Hence the delay; my midmorning snack was enjoyed on the drive into work {along with a 3rd cup of coffee}. #sorrysonotsorry
I finally found some new Chobani in my area at Target and even though, there was already plenty of Chobani in my fridge, I still had to try this raspberry/chocolate combo. I’m impressed…not too tart, love the added chocolate pieces and I also love that one cup is only 100 calories. Too bad I didn’t have any raspberries to top it off with, but the blueberries worked pretty good.

Lunch was some delicious leftover Crockpot Lasagna. This recipe turned out really great and a winner in my book because my picky kiddos ate it up….even with the “green stuff”! To go along with the lasagna I had a salad with mixed greens, broccoli, mushrooms, roasted peppers, carrots, eggplant sticks and some greek vinaigrette.

The usual was on the menu for an afternoon snack….gala apple slices dipped in some crunchy honey cinnamon pb {yes, this is my 3rd batch!}.

An unpictured clementine was enjoyed to tied me over before dinner…can’t get enough of these. Madelyn and I dropped Landen off at gymnastics and then we headed to McAlister’s Deli to grab something to eat. I knew I wanted soup before I even pulled into the parking lot. It was soooo cold here today. I went with a ham & cheese toastie sandwich and a cup of broccoli cheese soup. Very good and filling….no need for any before bed snack.

Electric blanket is on and I’m hopping into bed before 10:00!

  4. I used to love having delays or snow days during high school and college. It would totally brighten-up my entire week. Too bad I was never very productive on these days…but hey, I guess you aren’t supposed to be, right? ;) Now that I work at a college I still have the occasional chance of having a snow day (fingers crossed!!), but I’m not too hopeful with the lack of snow that we have had here in the Midwest.

    I am loving the sound of that yogurt. I will have to be on the lookout the next time that I head to the store!

    I am now also even more excited to make some homemade peanut butter. If you are already on your third batch then it absolutely MUST be good! ;)

  5. Cinnamon honey PB?! YES PLEASE!! I woke up to a bit of snow here in NJ today! I am dreading walking out the door in a few minutes! It takes me 15 minutes just to put on enough clothes in this kind of weather! haha And to think Monday I was wearing shorts! I am also in bed by 10pm! Like clockwork…..otherwise I am exhausted the next day! Enjoy your day! :)

    • The weather is crazy here in Texas too. One day we have the windows open and we’re burning up and the next we have a fire in the fireplace and we’re freezing! ;)

  9. If my kids eat it I feel like it’s a win too! It’s rare that my kids eat something I actually want them to eat. We did everything the right way with a wide variety of foods in the beginning. They are both still picky!

  10. A delay?! That sounds absolutely perfect. Sadly we got all of our snow and horrible weather over winter break. Stinks for two reasons: 1. Hard to do anything with the roads covered in black ice. 2. It wasn’t during school so no chance for a delay or cancellation :( Glad you enjoyed yours though!

  11. Working in PJ’s is definitely a win. Of course, there are a few other things that I’d prefer to be doing while I was in PJ’s (sleeping, vegging, eating) buuuuuut if work is a must, then PJ’s are the preferred attire :D

  12. I just saw those little Chobani bites at my Target too and wondered if they were worth it – it’s good to hear a positive review!

    We’re expecting plenty of icy/snowy weather this week, which stinks. Last Saturday I went for a jog outside because the weather was so nice! I think the only good thing that comes out of ice and snow are snow days or 2 hour delays. :-)

  14. That salad with the mushrooms looks so good! We’re having day after day of frigid weather and snow, and all I can think about is soups and stews. Though that lasagna would hit the spot, too.
