Was your weekend a good one? I wouldn’t really say mine was all that fun, but it was productive and I did get to relax some. If you want to catch up on posts from the weekend….

Productivity….finished redecorating and cleaning out my son’s room.
Workout…Brad got my treadmill working, so now I can watch Bachelor and run at the same time. Unfortunately, it’s still not completely working and I can’t see my pace or miles ran…
That’s a Roseanne marathon that got me through today. Best show EVER!
Catching up on work…..Not so sure this is marvelous, but work has been so busy, I brought some home to get caught up.
Grocery store…..picked up all of the necessities for the week.
Jason’s Deli…..one of my favorite places to grab a delicious and very healthy meal. And now I have leftovers for lunch tomorrow!
A ready-to-go meal for tomorrow….I can’t wait to try this crock-pot lasagna. I’ve never done lasagna in the crock-pot, but I’ll be sure and report back to ya’ll.
Enjoyed some delicious eats, as always….this is half of a roasted kabocha squash; topped with a 3 egg white omelette, coconut butter, arils, chia seeds and a drizzle of honey. Absolutely delicious and sooooo filling!
That’s pretty much my weekend in a nutshell with some blogging and TV sprinkled in. I’m sitting in front of a fire watching the Golden Globes as a type…great way to end the weekend. Hope your’s was great too!

I enjoyed what I watched of it, but I’m not a very good judge, considering the only shows I watch are Grey’s Anatomy and Reality TV and I haven’t seen any of the movies nominated. But my oldest daughter, Alexis and I have a date to see Les Miserables next weekend!! Can’t wait!

I am interested to see how the Crock Pot lasagna turns out. I have heard great things about people cooking lasagna that way, but have yet to try it. I am sure that yours will be delicious!

Kabocha squash is my favorite of all the winter squash!!! So rich and sweet . . . I love it. The combo meal with kabocha that you made looks fantastic–totally up my alley. Good luck with the crockpot lasagna!

It is really good and very filling! Believe me, you won’t be hungry for several hours.
I normally really like healthy food and trying new things, but when I had kabocha squash I was not impressed. I simply roasted it, but there was something about the flavor that didn’t gel with my taste buds.
Crock pot lasagne looks interesting…keep us posted on the results.
I definitely have to top the squash with yummy stuff and sprinkle on salt. In my opinion almost anything is good topped with nutbutter!
Haha! I looooved Roseanne as a kid! I practically grew up with her family, and was DEVASTATED with the series finale! Have you seen it? It’s quite depressing haha

I still love Roseanne! I used to watch it in the middle of the night when my daughter was a newborn. That and Home Improvement. I’ve had my eye out for kabocha squash. I can’t find it anywhere!

Roseanne always has me and my husband cracking up!! I have a hard time finding kabocha squash too. Not sure if these are all around, but I found it at Srouts and I’ve also bought it at HEB.
Can’t wait to hear the report on the lasagna! That sounds awesome. And I’m with you on the treadmill + TV combo–it’s gotten me through soooo many not-that-thrilling runs.
I watched the Globes and thought they were…ok. I guess I expected a little more from Tina and Amy. And there were some definite awkward moments… But I LOVED seeing all the fashion and the movie clips, so overall, very entertaining!

Hey Kim! It’s Bachelor night… woohoo! I have tried crockpot lasagna… twice actually. What I like about it: I find that I can get a “taller” lasagna. What I struggle with: Perfecting all the ingredient proportions. I’ve been mixing and matching crockpot lasagna recipes for a while trying to get it just perfect.
