Well I can’t say my weekend has been too exciting, but it has been productive. I’m still sticking with my new year’s resolution to declutter and I finished up an ongoing project of redoing my son’s room. We got it all cleaned up today and got rid of things he no longer uses. It was a BIG job!
I also got in a BodyPump class. I don’t ever have time for them during the week, so on the weekend I always try to catch one. I only had time for a one mile run, though, because I had to pick up Madelyn from her friend’s house. It was her first sleep over with a friend and I would say it went pretty well; considering she cried the whole way home because she wasn’t ready to leave. Not the funnest car ride!
Breakfast was another French Toast Scramble. I’m so loving scrambles and they are especially scrumptious with Crunchy Honey Cinnamon Peanut Butter. Yesterday, I actually made another batch of the peanut butter, but this time it was smooth because I ran out of peanuts. For dessert, Madelyn had some spread on a graham cracker. She kept begging me for more, saying “I really like that peanut butter”. I’m telling you, it’s good stuff!
Not only did I make the peanut butter, I also made some Paleo Snack Balls. If you haven’t tried these, they’re great. I keep them in the fridge for an easy grab-n-go snack. I especially like the fact that they’re a healthy snack my kids enjoy. The main reason I made them was to have a nutritious snack to send with Madelyn to school for the week.
Well other than grinding stuff in the food processor, I just have not felt like cooking the past few days. I really think it’s because work has been so busy…by the time I get home, I don’t want to think about anything {including what I’m going to throw together for dinner}. I’m thinking, tomorrow when I go to the grocery store, I need to plan for some crock-pot and make-ahead meals for this upcoming week.
Not as good or nutritious as homemade, but not too bad on nutritional stats and still very tasty are a few premade dinners we had this week……one from Trader Joe’s and one from Costco.
When Madelyn and I were at Costco last weekend, they were giving out samples of chicken & mozzarella ravioli. Madelyn loved them, so I gave them a try and they were indeed pretty delicious. I boiled them up last night and then tossed them in olive oil and salt….the whole family really liked them.
Samples are what got us at Trader Joe’s too! Madelyn tried this Roasted Vegetable Multi-Grain Lasagna at TJ’s and ate it up. She liked it and it had veggies….I couldn’t not get it!
The whole family enjoyed this meal too and I had enough leftover to take to work the next day…. always a plus.
On the agenda for today is a run, the grocery store, and maybe a little more decluttering. Madelyn also has dance practice tonight, so we may have to hit up Jason’s Deli for dinner. Tonight, I will most likely prepare a make-ahead meal for Monday night. I’ve been thinking about creating a crock-pot lasagna meal, but we’ll see.

Love this! There are so many nights when I just don’t feel like cooking. Hence all the meal prep. It’s such a lifesaver for me!

If I don’t feel like cooking, it becomes “Mexican Night” in our house. I open a jar of salsa, grab some beans (I always have some in the fridge or freezer), maybe steam or roast a quick veggie . . . and it’s called build your own dinner with either a wrap or salad. It’s actually quite tasty, but it’s definitely the easy way out.

I definitely go through phases where I don’t feel like cooking, and right now I’m working my way through an extremely long one
There was a little while where I was relying on things like frozen pizzas and cereal, but I think I’m getting some of my cooking mojo back. I’ll be buying a slow cooker this week so hopefully that helps motivate me to start getting back into the kitchen again.

Oh I love the Paleo Snack Balls!! I did some similar lately, they were gone in no time.
I had a busy first week at work too, I am sure it was this together with the foggy cold weather that made me curl up on the couch doing nothing.
Oh and I can so relate on the non-cooking mood. I always hope my meals would just appear

Store samples get me every time! Luckily, I’m a vegetarian so at least I am somewhat limited. Otherwise, I would walk out of the market like I just hit a buffet!

. I was going to go this weekend but then remembered that I did not really NEED anything. So I did not go because I knew that I would just spend money on things I didn’t need….ahh, how not fun it is to try to be “responsible.”
Whenever I head into TJ’s or Whole Foods I generally pop a piece of gum in my mouth so that I will avoid being tempted by the samples. Last night, however, was a different story. And as a result, I definitely enjoyed some chips and guacamole at Whole Foods….so, so delicious!

I totally understand how you feel about not cooking. I cook three meals a day and clean up after three meals a day. IT. GETS. OLD. FAST!!! There are times where we eat frozen pizza on paper plates and I don’t even care! Going to check out that paleo snack ball recipe now!
