I have definitely got lots of Marvelousness to share with you today! My VERY favorite Christmas cookie!!!!!! This is the perfect cookie to make for gifts….everyone loves them and the recipe makes tons. They also freeze really well. Madelyn and I did some baking on Sunday and I will freeze the cookies to give to coworkers.
- 1 cup (sticks) butter, softened
- 1cup sugar
- ½ cup brown sugar
- 2 eggs
- 2 tsp. vanilla
- 2-1/4 cups flour (I use all-purpose.)
- 1 tsp. baking soda
- ½ tsp. salt
- 1-1/4 cup white chocolate morsels
- 1-1/4 cups chopped pecans, toasted
- 1-1/4 cups dried cranberries
- Heat oven to 375 F.
- Beat butter and sugars in large bowl with mixer until light and fluffy.
- Blend in eggs and vanilla. Add flour, baking soda and salt; mix well. Stir in chocolate, nuts and cranberries.
- Drop rounded tablespoonfuls of dough, 1-1/2 inches apart, onto baking sheets. *Cookies will spread!
- Bake 9 to 11 min. or until lightly browned. Cool on baking sheets 3 min.; remove to wire racks. Cool completely.
Now these cookies aren’t really what I would call healthy, but they are only about 100 calories per cookie. Don’t worry, I will be posting some healthy holiday treats, but I’m making these for others who aren’t necessary used to eating healthy desserts. I also think it’s important to enjoy the holiday season and all that comes with it, like sweets! #dominatediva
Aside from baking on Sunday, Landen had another gymnastics meet all day on Saturday and we celebrated my niece, Ava’s, 3rd b-day with a little Chuckie Cheese action.
Landen’s meet completely wore him out and this was him for several hours afterward. He did great, though and won 3 medals {you can see them around his neck in this pic}. So proud of him!!
The kids had a blast at Chuckie Cheese! They played and the adults were able to chat.
Ava is in an owl stage and loves everything with owls {notice the yummy cupcakes}. She wasn’t too thrilled with Chuckie, though. Ha!

My favorite Christmas cookies are definitely peanut butter blossoms. I am obsessed with the peanut butter and chocolate combination.

I love the name of those cookies.
Because of my stomach, allergies, etc. I won’t be able to eat any Christmas cookies this year. But, we are still having a baking day and we’ll make whatever the rest of my family will want to eat. My brother is kind of boring though… Chocolate chip cookies for him. Me? I love Mexican Wedding Cookies, (Fluffy) Snickerdoodles, my cousin’s sugar cookie recipe, gingerbread cookies… I love basically all of them. Haha.

The holidays are a perfect time for not-so-healthy cookies, although honestly, anything that’s homemade and has pretty simple ingredients is healthy in my books. These cookies sound fantastic, and absolutely perfect for Christmas. I’d have to say that my favorite holiday cookies are probably shortbread, especially when half is dipped in chocolate.

Oooooh those cookies look amazing! I’m not sure if this counts as a cookie, but my mom makes chocolate peanut butter bon bons for Christmas every year and they’re to die for!
