I’ve got a busy, but fun weekend to look forward to.
On Saturday, my son will have his first gymnastics meet. He’s getting so nervous and I’m getting nervous for him.
On Sunday, I will actually be having my first of two Thanksgiving celebrations. This was an unexpected, but wonderful change. My brother and sister-in-law are coming into Fort Worth from Mississippi to buy a Standard Poodle. We weren’t expecting to see them over the Thanksgiving holiday because they will be spending Thanksgiving with my sister-in-law’s parents in Florida and then will be in Texas for Christmas {longest sentence ever}. Since they will be in town to get the puppy; we are moving Thanksgiving up, so we can spend it all together.

I’m so excited that we will be celebrating early because I’m planning to make Grandma’s Pumpkin Squares {which are out of this world} and this way I can share the recipe and pictures with you and you will have plenty of time to get everything you need and make them for Thursday. They’re not really on the healthy side, but we all need a splurge, right?

On Thanksgiving Day, I will be celebrating with Brad’s family. We are planning to go see Life of Pi after dinner. Has anyone read the book? I haven’t, but I’ve heard it’s a must read. I really intended to read the book before seeing the movie, but there are so many books and so little time. Right now, I’m reading The Happiness Project and it’s a life changer, I’ll tell ya. Book review will be in a couple of weeks.

Onto my Thanksgiving recipe of the day……
I’ve made this recipe with both sweet potato and butternut squash. Either way it’s super easy and very tasty. This time when I made it, I paired it with fresh cranberries to add a little pizzaz for the holidays. If you’re not into the sweet and savory {your crazy} just leave the cranberries out.

Baked Garlic Butternut Squash

Serves: 4-6
Quick and easy side that goes with almost anything. Be sure to double the recipe if you’re feeding a crowd.
Ingredients
  • 1 tbsp extra virgin olive oil
  • 4 garlic cloves (you can mince these, but you don’t have to)
  • 1 tsp chopped fresh rosemary or 1/4 tsp dried rosemary, crushed
  • 1/2 tsp salt
  • 1-1/2 lbs butternut squash or sweet potato, peeled and cut into small chunks
  • 1/4 cup reduced-sodium chicken or vegetable broth
  • 1 cup fresh or frozen cranberries (optional)
Instructions
  1. Preheat oven to 350F.
  2. In a large bowl, combine oil, garlic, rosemary and salt; add squash or potatoes and cranberries, if desired. Toss to coat.
  3. Transfer to a 13 x 9 x 2 inch baking dish coated with non-stick cooking spray.
  4. Bake, uncovered for 30 mins.
  5. Add broth; bake 10-15 mins longer or until squash/potatoes are tender, stirring occasionally.

 

Hopefully, you’ll get lucky like me and find this at Costco; which will make the recipe even easier. I also know that right now Trader Joe’s is selling precut sweet potato.

  3. That dog is adorable! I have two dogs- one is a golden doodle (golden retriever and poodle mix) and the other is a labradoodle (lab and poodle mix). My golden doodle has that same cute, scruffy look going on. Poodles are very smart dogs so I am sure your brother and sister-in-law will love it!

    I am the same and always like to read a book before watching the movie because generally, the book is better. However, I am having the same problem lately and seem to be lacking the time. Hopefully once I finish school I will have more time to accomplish these types of things!

  4. I tried it to cut up a butternut squash for a recipe and told myself I would never cut up that squash again (my knives must be super dull) because it was so hard to cut. Then I found it already cut up at Costco and was really happy. It makes recipes like your super easy to make and that makes life that much better. Can’t wait to try your recipe.
