Sweet Potato Side Dish & MIMM

So here’s why my Monday is Marvelous….

Here’s a little hint on the project…

I’m so excited to be able to walk out and grab the herb or veggie that I need for a recipe. Hopefully, it works out like I think it will! ;)

And on to the goods…..

My goal is to post a recipe for Thanksgiving everyday this week, we’ll see if I can reach that goal. ;) This first one is one of my very favorite sides. If you like sweet potatoes, you will love these. They’re super simple and great because each person gets their own potato half.

Creamy sweet potato. Perfect for Thanksgiving Day side dish. Double the recipe, if you’re feeding a crowd.
Ingredients
  • 2 large sweet potatoes (about 2 lbs.)
  • 2 tbsp plain nonfat greek yogurt (I use Chobani.)
  • 3 tbsp unsweetened almond milk
  • 1 tbsp brown sugar
  • 1 tsp cinnamon
  • 1/4 cup pecans or walnuts, chopped
  • 1/4 cup dried cranberries (optional)
Instructions
  1. Heat oven to 425 degrees. Cut potatoes in half, lengthwise and place cut-sides down on foil lined baking sheet or pan.
  2. Bake 35-40 mins or until tender. The amount of cooking time will depend on the size of your potatoes.
  3. Once potatoes are cooked allow them to cool slightly. Then scoop out centers of potatoes into bowl, leaving 1/4-inch-thick shells.
  4. Add greek yogurt, sugar, milk, and cinnamon to potatoes; mash together until blended.
  5. Spoon potato mixture into shells; top with nuts and cranberries. Bake 10 mins or until potatoes are heated through.

  7. You instantly had my attention with the title of this post…I am all about anything that has to do with sweet potatoes! ;) I am seriously thinking about including this recipe in my Thanksgiving meal this year. Thanks!

    My favorite Thanksgiving side used to be cheesy potato casserole, but since I am a vegetarian now and do not eat cream of chicken soup, I would have to say that either fruit salad or green bean casserole take the top spot. Yum!!

  8. Yum! I love sweet potatoes and this dish sounds so good! Marvelous this Monday is that I got to go to Bodypump for the first time in a long time. Not so marvelous is that I didn’t get to stay for Turbo Kick because the Love Nugget wasn’t really loving the gym daycare today :-( Oh well. One out of two is good!
