Did everyone get to enjoy their extra hour of sleep? I honestly didn’t even really notice…I’m such an early riser.
Hope everyone’s weekend is going great! Last night, my nieces were over to roast hot dogs and S’mores in our fire pit and they had a blast.
I also made a very successful trip to Target, Costco and Trader Joe’s. I know….I’m crazy! My trip to Target was a quick one. I really just ran in to grab a few things that I couldn’t get at Costco or Trader Joe’s. I also went in to see if I could find the Clif Full Moon brownie bars on sale, like Katie did, but booo…..none to be found at my Target. Another item I had wanted to pick up was another box of Kodiak cake mix; which I forgot…..#fail! I do plan on sharing some of my favorite finds with you later this week.
So onto breakfast…..
I was successful at changing up my breakfast everyday this week. And while I’m still loving pumpkin, I can’t forget to make good use of the delicious apples in season. Last weekend, I found a pretty good price on some organic Honeycrisp apples. They are huge and absolutely delicious…..the perfect mixture of sweet and tart.
I started off by chopping up half of an apple the size of the one above and tossing the apple pieces in 1 tsp of cinnamon and a packet of stevia. Then I cooked them up in a skillet over med-high heat in 1 tsp coconut oil. Meanwhile, my oats were simmering. Steel-cut oats take quite a bit longer than regular oats, but in my opinion; they are well worth the wait. However, if you’re in a hurry regular oats will totally work, just adjust the cooking time in the recipe according to package instructions.
This oatmeal is the perfect breakfast for those cool Fall mornings. There is wonderful cinnamon apple scrumptiousness in every bite. Add chopped walnuts and dried cranberries to complete the Fall flavor.
A big bowl of oatmeal makes you warm all over, no matter what the weather is outside. It is also the perfect pre or post workout fuel. Often times when I’m running on a cold morning, all I can think about is getting home and warming up with a sweet bowl of filling oats.
- 1 tsp coconut oil (cooking spray or other oil will work)
- 1/2 large apple or one small apple of your favorite variety
- 2 tsp cinnamon, divided
- 1/4 cup steel-cut oats (or 1/2 cup old-fashioned oats)
- 1/4 heaping cup unsweetened applesauce
- 1 tbsp chia seeds (optional, but makes for fluffier oats)
- 1 tbsp chopped walnuts (optional)
- 1 tbsp dried cranberries (optional)
- 2 stevia packets or other sweetener, divided (optional)
- Heat coconut oil over med-high heat in a medium skillet. Chop apple and toss apple pieces in a small bowl with 1 tsp cinnamon and 1 stevia packet.
- Cook apple pieces until they are of desired softness. (I cooked mine for about 10-15 minutes turning occasionally.) Set aside when apple slices are of desired softness.
- Meanwhile, cook oats according to package instructions. If you are cooking steel-cut oats, they will take approximately 30 minutes. After steel-cut oats have cooked for 15 minutes, whisk in the chia seeds, 1 tsp cinnamon and applesauce. I usually lower my heat a bit at this point and stir a bit more frequently.
- When oats are finished cooking, remove from heat and add in the cinnamon apple pieces, walnuts, cranberries and stevia or other sweetener.
