The BEST {healthy} pumpkin pie ever!!!

I’m sooooooo excited to share this recipe with all of you!!! I came up with it a couple of weeks ago for Kasey over at for the #plantPOWER challenge.

If you’ve been following the challenge, then you know that today’s #plantPOWER food of the day is {dessert}.

What better dessert for the Fall than pumpkin pie? It’s always been a favorite of mine and I never miss out on having a piece for Thanksgiving.

I think of pumpkin pie as one of the more healthy desserts, but the ingredients in the crust and the {must have} cool-whip concerned me. My goal in creating this recipe was to use all “real” plantbased foods. I also wanted to make the pie appeal to the masses….because of taste and ingredients. The pie is vegan, gluten-fee, and Paleo {no one is discriminated against}. ;) But, it also appeals to the masses due to it’s yumminess {yes, that’s a word!} My picky kids loved it and went back for seconds and my husband and I pretty much devoured it. We couldn’t get enough.

I used Angela’s whipped coconut cream tutorial to make the topping and this stuff is fabulous.
