Hi ya’ll! It’s What I Ate Wednesday Day!! Jenn’s theme this month is “spooky snacks” and if you call green pancakes a spooky snack, then we’re in business!
Something new for breakfast this morning…..and it’s green….and it’s sweet….and it’s delicious! It also looks like something that should be served for Christmas….or St. Patrick’s Day. Maybe I should have used carrots and went for orange? Oh well!
I think I should call these Green Monster Pancakes and then we’re at least sticking with the Halloween theme…..
I’m going to go ahead and post the recipe because I thought they were very yummy, but I plan on working on the recipe and may get back to you with a little tweak. I would have liked them to stay together a little better….these could have easily been made into a green monster scramble.
I tried just almond butter with strawberries on one of them, which was good; but then I added just a dab of pure maple syrup to the other two, which was WONDERFUL.
I ate two for breakfast and saved the third one for my midmorning snack.
GREEN MONSTER pancakes {gluten free & Paleo(without added sweetener)}
serves 1 {3 pancakes} about 230 calories for all three without toppings
Ingredients:
- 4 tbsps coconut flour
- 1/2 tsp baking powder
- 1 C fresh spinach (I used a handful)
- 2 egg whites
- 1/2 small {very ripe} banana (could sub in about 1/4 C pumpkin or applesauce)
- 1/4 C unsweetened vanilla almond milk (could use any milk) (may need a few splashes more to achieve desired consistency, batter should be thick)
- stevia packet or other sweetener (optional) (these pancakes are Paleo without the added sweetener)
Directions:
Add all ingredients to a food processor and grind for a few seconds. Add a few splashes of milk, if needed. Heat a large skillet or griddle and grease with a tsp of coconut oil or a preferred non-stick cooking spray. Once skillet is hot, transfer batter to skillet making 3 small-med pancakes. Cook on med-high heat for a few minutes (about 5) on each side. Use your favorite toppings to make them super delicious!
I could not wait to dig into lunch. I had some leftover quinoa and I had come across this recipe at saywhatyouneedtosayblog.com, so Monday night I threw this together for lunch on Tuesday. It was so good and could easily be changed up to suit your taste. I made just a few minor changes…..I added chicken, I made mine to serve one, used pumpkin seeds, and I used arugula and spinach.
Here’s a rundown of how I made the salad my own…..
apple quinoa salad with chicken
Serves 1 and is about 500 calories with dressing.
Ingredients:
- 1/2 C quinoa (cooked)
- 1 apple (a pear would also be wonderful)
- 1/2 C chopped chicken
- 1/2 C chopped arugula (I used a small handful)
- 1 C chopped spinach (I used a large handful)
- 2 tbsp roasted pumpkin seeds (chopped pecans would be great too)
- 2 tbsp dried cranberries
- salt & pepper (to taste)
+For the dressing+
- 1 T Apple Cider Vinegar
- 1 T Honey
- 1 T Lemon Juice

My afternoon snack was the usual…apple slices with pb2.
Dinner was brought from home and enjoyed while Landen was in gymnastics practice. I had a tuna salad pita with leftover veggies on the side. Any time I have veggies that are about to go bad in my fridge, I throw them in the oven and roast them for a quick side dish….just a little olive oil spray and seasoning does the trick. I either use Trader Joe’s everyday seasoning or 21 seasoning salute. This tuna salad was very different from the normal tuna salad and included green beans and olives- recipe to come. And excuse the horrible picture…

Isn’t the 21 seasoning salute awesome?!? I love that stuff. I’ve never heard of their everyday seasoning though . . . is that new? I’ll have to keep my eye out for it.

Not sure if it’s new. It comes in a grinder and has just a slight spice to it. I use it over my salads, roasted veggies, or really anything.

I cannot say that I have ever had spinach in my pancakes…but I sure am intrigued by your idea to use carrots to make the pancakes orange. Or possibly sweet potatoes? I think both sound delicious, but I seem to have an obsession with the orange vegetable family!

so, I’m struggling with the appearance of these pancakes, although I think the idea of sneaking a cup of spinach into anything is a good one. I’m going to try this tomorrow!
