rainy day & taco soup = perfect day

Hello friends! Hope everyone is enjoying their weekend.

Yesterday was a VERY rainy day….it continuously rained all day. Which is good for us down here in Texas. Since I couldn’t get my run on, I went to a Bodypump class at the Y. It has been months since I’ve been to Bodypump and I thoroughly enjoyed it and I’m REALLY feeling it this morning. I will definitely be putting that on the workout agenda again for next weekend.

What goes better with a rainy day than some kind of soup/chili/stew? Not much of anything; so I cooked up a super simple, super quick, and super tasty {with a definite kick} taco soup. This soup can be on your table in less than 30 minutes and there is very little prep to do….it’s all about throwing everything into the skillet.

Spicy Chicken Taco Soup

Spicy, quick, easy, and very tasty!
Ingredients
  • 2-3 cups shredded chicken (I used a whole rotisserie chicken. Add more or less depending on your preference.)
  • 1 tsp extra virgin olive oil
  • 1 onion, finely chopped
  • 1 can chili beans, undrained
  • 1 can black beans, drained and rinsed
  • 1-1/2 cups frozen corn or 1 can corn
  • 1 pkg taco seasoning or a favorite homemade taco seasoning recipe (I used Trader Joe’s taco seasoning packet; which only contains spices in it’s ingredients.)
  • 2 cups of your favorite salsa (Use mild or a bit less than 2 cups for a less spicy soup.)
  • 1-1/2 cups water
Instructions
  1. In a large skillet over med-high heat, heat oil. Saute onion until tender, about 3-5 minutes.
  2. Add all other ingredents, cover skillet, and bring to a boil. Turn heat down to simmer.
  3. Simmer for 5 minutes.
  4. Top with favorite toppings; such as plain greek yogurt, avocado, cheese and chips.
Notes

Add more water, if you like your soup a bit thinner.
This soup is wonderful served over eggs, rice or drained and wrapped up in a tortilla.

 

Anything fun on the agenda today? I’ll be heading out to the Rangers Game this afternoon. My husband and son go every season, but I haven’t been in a couple of years. Very excited for some fun family time and I think the weather will be beautiful!
