paleo pumpkin muffins

Anyone totally over pumpkins yet? I’m sorry, but I’m just getting started….might as well enjoy it while you can!

And now for a recipe, so that you can go ahead and get your pumpkin fix; if you haven’t already. I really enjoyed these muffins! But I do want to warn you and let you know that they, of course, don’t have the same texture as a normal muffin. They are a bit less moist and somewhat cakier. Having said that; I really liked them and will make them again. They have no sugar or sweetner in them, but they have a hint of sweetness that satisfied my sweet tooth. My favorite way to eat them is with sunbutter or crumbled in my butternut squash chicken chili. {which was a delicious pairing}

Paleo Pumpkin Muffins

Delicious pumpkin muffin with no added sugar or sweetner that has just a hint of sweetness to satisfy your sweet tooth. Paleo friendly and gluten-free!
Ingredients
  • 1 cup almond meal/flour
  • 1/2 cup coconut flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp pumpkin pie spice (plus more for topping)
  • 1/8 tsp salt
  • 3 eggs
  • 2 tsp pure vanilla extract
  • 3 tbsp coconut oil
  • 3/4 cup canned pumpkin
  • 1/3 chopped pecans (optional for topping)
  • 1 small very ripe banana, mashed
Instructions
  1. Preheat oven to 350 degrees and prepare a muffin pan with tins or nonstick cooking spray.
  2. Combine all dry ingredients in a large bowl.
  3. Combine all wet ingredients in a medium bowl.
  4. Stir wet ingredients into dry ingredients.
  5. Fill muffin tins about 3/4 full. Makes 12 muffins.
  6. Add chopped pecans and a sprinkling of pumpkin pie spice to each muffin.
  7. Bake for 20-25 mins at 350 degrees.

  1. i was JUST tweeting how i’m sooo excited for pumpkin pie season! :) i dunno wat it is about that stuff, even tho i’m usually a choco-holic, the pumpkin pie has a soft spot in my heart.

    and i’m willing to bet these muffins would def do the trick too. :)

  2. I have made this recipe twice now, adding in a little raw honey to sweeten it up. These are very quickly becoming a family favorite! I actually swapped out the baking soda for 2 more tsp of baking powder last time and they actually got more of that traditional muffin texture. Love this recipe! Sharing your post with everyone!
