The best Paleo snack balls ever!!

Yay! It’s Friday!!

Do I sound just slightly excited? It’s been a great week at work, but very busy. This weekend is actually going to be pretty busy too. Madelyn has a birthday party to attend, Landen has a make-up gymnastics class, I have a VERY important mani/pedi appointment, then there’s the grocery store, workouts and cooking up some yummy food. Sometimes the weekends seem even busier than the week!

So…. on Sunday I started the Paleo diet and have been following it very strictly {no sweet potatoes, honey, gum, the list goes on….} this week and plan to for a total of at least 30 days. It’s going really good so far and I’m feeling great. I’m actually not missing the grains that much, but I’m missing stevia in my coffee. Speaking of coffee, I know everyone’s loving the pumpkin spice right now {and I do to}, but if you haven’t tried the Wild Blueberry Mountain k-cups, you need to. Dare I say they’re better than the pumpkin spice! Yes, I know flavored coffees probably aren’t Paleo, but I’m just not giving them up!

On the Paleo diet, I knew that I would need some kind of sweet snack to get me through. If you’ve been reading for any length of time; you know I’m big on snacks and sweets. Dates to the rescue!!!! Rather your eating Paleo or not, this recipe is a winner; even my kiddos loved them. Enjoy!!!

Paleo Snack Balls

Prep Time: 8 minutes

Total Time: 8 minutes

Yield: 28 snack balls

Serving Size: 1 snack ball

Calories per serving: 113

Fat per serving: 8.6 g

Sweet, cookie-dough-like treat that's delicious, but good for you too!

Ingredients

  • 10 medjool dates, pitted
  • 1/2 cup water
  • 1/4 cup coconut oil (may need a little more to achieve desired consistency)
  • 1/4 cup almond butter (or other favorite nutbutter or sunbutter)
  • 2 tsp pure vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup raw walnut halves
  • 1 cup raw whole almonds
  • 1 cup shredded unsweetened coconut

Instructions

  • Combine pitted dates and water in a microwave-safe bowl and microwave for about 40 seconds.
  • Drain water and then combine all ingredients in a food processor.
  • Process, continuing to stop and scrape the sides of the processor every few seconds.
  • You may need to add a bit more coconut oil after a couple of minutes of processing.
  • Process to the consistency that you desire. If you have kids that you are feeding these to; you may want to process the nuts up a bit more.

Notes

Store in an airtight container, in the fridge or freezer for several weeks.

I’ve even thought about trying to back these as a cookie. Not sure how that would turn out….what do you think? Anything I’d need to add?
