Going Greek

TGIF!!

Here’s a little something if you trying to savor the last few weekends of Summer and enjoy cooking out while you can.

Last weekend my family cooked out and I experimented a bit with the burgers; which turned out so tasty and juicy. I added guacamole to my burger and didn’t need any other toppings. I also made an old favorite to go alongside the burgers.

Greek Turkey Burgers

Recipe Type: Main
Author: Kim Lee @hungryhealthygirl.com
Prep time: 8 mins
Cook time: 10 mins
Total time: 18 mins
Serves: 4
Lots of yummy flavors in this burger and super juicy from the added bell pepper!
Ingredients
  • 1lb. lean organic ground turkey (any ground meat would work)
  • 1/2 tsp salt
  • 1/2 cup feta cheese
  • 1 green onion, diced
  • 1 cup red pepper, diced (about one large)
  • 2 garlic cloves, minced
Instructions
  1. Mix all ingredients together and form into patties.
  2. Cook on the grill, skillet or oven.
  3. I grilled mine and they took a total of about 10 mins to cook.

What went alongside the burgers was actually my favorite part of the meal….the couscous salad. It is delicious, light and refreshing. All of the flavors and textures combine perfectly. The roasted corn was pretty tasty, too. The sweet corn combined with spicy cayenne pepper and tangy lime….my mouth was in flavor overload {in a good way}. Have an absolutely wonderful Friday and weekend! Anyone have any fun plans this weekend? I’m planning to mostly stay home and do some major house cleaning. The rest of my September weekends will be packed with fun activities., with one very special girl turning 16 later on this month! I’ll see you on Sunday with a “Power Meal” recipe!

  2. Mmmmm, grilled corn! I love roasting Brussels sprouts on the grill as a side, or asparagus. It’s also fun to grill an onion, and use it as a burger topper. Boy, this is making me sad that summer is coming to an end!

    Happy Friday!
