Powermeal Day & 2 yummy recipes

Welcome everyone! Is everyone having a great weekend? My run is done and now I’m trying to enjoy the last day of Summer vacation by just doing nothing, but relaxing and preparing for a back-to-school week ahead.

Yesterday, my plan was to run outside, but due to rainy weather that wasn’t happening. I did an inside workout instead. If you “think” you like burpees, just give this Zuzana workout a try…..whew!

I also went to TJ’s yesterday and found some new favorites. These sweet potato chips dipped in chunky guac is the bomb!! Madelyn loves these cheese puffs. And I enjoyed a couple of squares of this dark chocolate after dinner, which was delicious.

And some finds that I haven’t tried yet. I’m planning to roast these brussel sprouts and use them as a side for a pasta dish I’m trying this week {hopefully it will be blog worthy}. Very anxious to try this spicy black bean dip, that was only 1.99.

I’m sharing two powermeals with you today. One was yesterday for dinner and one was this morning for breakfast.  Thanks to the lovely Kasey for hosting another round of Powermeal Week!

Let’s start with this morning’s breakfast.

Well what do you know?  I had to break out the pumpkin. I’m sorry I just couldn’t resist any longer.

I’m so glad I did! These might just be my new favorite pancakes.

I made pumpkin protein pancakes and I finally was able to slather some coconut butter atop them. I know I’m a little late to the party, but after looking everywhere from TJ’s to HEB to Sprouts with no success; I finally ordered it from a wonderful company that sells all kinds of health products and vitamins. This was my first time to order from Swanson Health Products, but I will definitely be back. I also bought some liquid hazlenut stevia that I’ve been dying to try, but couldn’t find it for cheaper than $11.00, but SwansonVitamin.com had it for under $7.00. I haven’t tried it yet, but I’ll let you know.

Okay, and on to the recipe…..

Dry ingredients include 1 cup oat flour, 1/2 cup whole wheat pastry flour, 1 scoop vanilla protein powder (optional), 4 tbsp xylitol, 1 tbsp baking powder, 1/2 tsp salt, 2 tbsp cinnamon, 1/4 tsp all spice, and 1/4 tsp nutmeg.

Wet ingredients include 4 egg whites, 1/2 cup raw pumpkin (not pumpkin pie mix), 1 cup unsweetened vanilla almond milk (Almond Breeze).

I’m so glad I didn’t hold off on the pumpkin any longer. These will definitely be a Fall staple for this family on the weekends!

Okay let’s move on to dinner last night. It was a perfect Saturday night powermeal.

Ever since Ashley’s post on her Nachos Fries, I’ve been thinking about recreating devouring them. And, believe me, I did just that!

I didn’t change up her recipe very much. Her seasonings were spot on. Here’s my take on it….

Sweet Potato Nachos

Total time: 45 mins
Serves: 3-4
You’ve got the sweet from your sweet potatoes and savory from your black bean topping that combine to create a major WOW factor! Super yummy and made with all good things!
Ingredients
  • -For potatoes-
  • 4 med-sized sweet potatoes, sliced lengthwise about 1/4″ thick
  • 2 tbsp extra virgin olive oil
  • 2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp coriander
  • 1/4 tsp black pepper
  • -For Black Bean Nacho Topping-
  • 1 (15 oz.) can black beans, drained & rinsed
  • 1 med red, yellow, or orange bell pepper, chopped
  • 1 cup corn, frozen or canned
  • 1 small can chopped green chilies
  • 1/3 cup red onion, chopped
  • 1 tbsp evoo
  • 1 garlic clove, minced
  • 1/4 tsp salt
  • 1/4 tsp paprika
  • 1/2 tsp chili powder
  • 1/2 tsp oregano
  • 1/2 tsp cumin
  • -Toppings (optional)-
  • greek yogurt
  • shredded chicken
  • avocado
  • tomato
  • salsa
  • egg
  • ketchup
  • cheese
  • sour cream
  • feta
Instructions
  1. Preheat oven to 425 degrees and prepare two baking sheets with cooking spray or parchment paper.
  2. Before slicing potatoes, heat in the microwave for 5 min. (This will make them easier to cut and decrease overall cooking time.)
  3. Mix sweet potato spices in a small bowl.
  4. Toss potato slices in olive oil in a large bowl. Then add spices and continue to toss.
  5. Transfer slices on a baking sheet and back for 20 min. Flip and back another 15 min.
  6. While the potatoes are baking, cook up the topping.
  7. Heat onion, pepper in oil until soft, about 8 min. Meanwhile mix topping seasonings in a small bowl.
  8. Once the onions and peppers are soft, add minced garlic and spices and cook for 1 min.
  9. Mix in corn and beans. Stir over heat for about 5 min.
  10. Stir in green chilies for about 1-2 min and until hot.
  11. Once everything is finished cooking, make nacho piles with sweet potato layer and bean topping and other desired toppings.
  12. If desired, make pile on baking sheet and broil on low for a few minutes to melt cheese.
Notes

When adding the seasoning to the sweet potatoes, it may seem to be too much. Don’t worry, it’s perfect.
There will be leftover black bean nacho topping, which would be great served over a salad, eggs, wrapped in a tortilla, or even as a side dish.
My personal fav toppings are greek yogurt, shredded rotisserie chicken, green salsa, avocado, and feta. I did not broil my nachos and they were great.

  4. I just saw pumpkin and the store and almost bought it! I can barely hold out, its so good. Those pancakes look so yummy, I think I may have to stop by the store again tomorrow and pick pumpkin up! I also love the idea of the sweet potato nachos..yum. Thanks for the great ideas!!
