day 4 back-to-school snacks, Brownies & WIAW

Before we talk about what I ate Wednesday Tuesday, lets get to day 4 of snack attack.

These Black Bean Brownies are one of the most scrumptious health foods I’ve ever created!! You have got to give these a try!! And, YES, you do see the words “black bean” on that picture! ;)

Fudgy Black Bean Brownies
Recipe Type: dessert or snack

These brownies are so healthy; they can totally be a nutritious, but delicious snack! I made 4 horizontal cuts and 4 vertical cuts to make 16 small brownies.
Ingredients
  • 1 can black beans, drained and rinsed
  • 10 medjool dates, pitted
  • 2 heaping tbsp almond butter (or other preferred nut/seed butter)
  • 1 tsp pure vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1 tbsp ground flax
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 2 egg whites
  • 1/4 + 2 tbsp unsweetened vanilla almond milk (may need a bit more for desired consistency)
  • 1/4 cup xylitol (or sugar or other sweetner)
  • 1/4 cup mini chocolate chips (optional)
Instructions
  1. Preheat oven to 350 degrees and prepare 8 x 8 baking pan with cooking spray.
  2. Combine all ingredients in a food processor and mix for about 2-3 minutes, until all ingredients are combined and mixture is smooth.
  3. Transfer mixture into pan and bake at 350 for 30-35 mins or until toothpick comes out clean.
Notes

Allow brownies to cool for 10-15 minutes on a wire rack before cutting them.
Brownies are best stored in the refrigerator, because all ingredients are natural these brownies will spoil faster than your typical brownie. If you like your brownies warm; pop leftovers in the microwave for about 30 seconds.

Super easy recipe….. just throw all of the above ingredients into a food processor, with the addition of unsweetened vanilla almond milk (don’t forget to drain and rinse beans) and process for a few minutes, pour it into a greased 8X8 pan, throw it in the oven for 30-35 mins at 350 and whala!

Fudgy yummy goodness…..I promise you’ll never guess that the flour is subbed for beans! And for all my gluten-free friends, these Black Bean Brownies are gluten-free!

Breakfast: Oats in a jar. Warm oats this time…I haven’t had these in serval months and when I saw we had an almost empty sunbutter jar, I knew I had to have them. Oats sure do heat you up, though! I don’t know if I will be able to have those again until things cool down around here. But they sure were tasty.

Midmorning snack: If you live near a Trader Joe’s and haven’t tried these California White Necterines, do yourself a favor and go buy some. They have been so sweet and juicy all Summer long. One of my favorite Summer staples!

Lunch: salad with chicken and cracker from Jason’s {which I love with all my heart}.

Afternoon snack: Bean & Popcorn action!! I bought this popcorn this weekend at Target and I will be buying it again for sure!

Dinner: We picked up dinner from Which Which. If you have one in your area and haven’t tried it; you should. You can eat pretty healthy and they have all nutritional info on their website. There are tons of different choices and combinations. However, I have trouble changing it up because I love this combo so much.

Dessert: Of course, I had to a have another Fudgy Black Bean Brownie!

  1. I love recipes with secret healthy ingredients! I’ve tried black bean brownies before, but they were just okay. I’ll try yours, but I dont have the sweetener you have. I wonder if stevia would work. hmmmm….

    haven’t tried that popcorn yet, but got some for an upcoming trip…. so we’ll see!

    • I bet stevia would work just fine. It seems that the xylitol has more of a natural sugar taste, but I like stevia too. People that aren’t used to stevia may not like them, but if you’re used to it I’m sure you would.

    • I’m not soy free; I just use enjoy life because they are one brand that I can find for chocolate chips that use natural ingredients and don’t have preservatives.

  4. First off, those brownies look fantastic! I think I have all the ingredients in my place right now too… might have to do some baking this morning. Oh and I have tried Which Wich. It is really delicious, but I always feel a little overwhelmed there! haha, so many choices :P.

    My biggest summer staple this year has been fresh berries with yogurt and cucumber slices with fresh guacamole. Drooling just thinking about it.

  5. These brownies look great! However, I don’t have flax seed here. Are they a necessary ingredient or is that something I can replace with another ingredient, like chia seeds?

    Interesting recipes, I never thought black beans could be a cake ingredient. However, it sounds a little bit complicated for my cooking skills so I will stick to the salad which looks really amazing. Keep the great recipes coming!

    • Thanks Mariella! But if you want to give the brownies a try, they’re not complicated at all…..just throw everything into a food processor. ;)

  8. Nice recipe jumping off point, but I think the 1/2tsp salt must be a typo because these were way over salted. I thoroughly rinsed the beans so they had no residual seasoning, and while my sunflower butter contained salt, almost all nut butters do so I doubt that was the problem. I suggest readers omit salt and taste, adding by 1/8tsp as needed. I found the saltiness increased with baking while the sweetness decreased, so be advised when adjusting the flavors of the batter. Otherwise, with the modifications I made, this produced a nice moist brownie. I used 1 egg instead of 2 whites sense I like my brownies dense and didn’t need the extra leavening. I also omitted the flax so wanted the yolk in there as a binder. I added 3 heaping tbsp of coconut oil for richness and moisture, subbed milk for almond milk,maple syrup for xylitol, raw cacao for cocoa and dark chocolate bar for chips. I think these last 3 mods may have cut sweetness a little bit and next time ill prob increase the maple and coconut oil while omitting the nut butter altogether.

    But, fyi, To save my way too salty ones, I embraced the salt and made a peanut butter cream cheese frosting (just those 2 ingredients plus honey) and a honeyed vanilla whipped cream and the result was quite tasty and husband approved. I first tried to mask the salt with the whipped cream alone and then with the whipped cream and berries, both of which failed mightily. Shows you’ve got to roll with what you got, I suppose! Happy baking all :)

    • Thanks for the comment and info. I have a feeling that not using the xylitol is what made the brownies so salty. Xylitol is so sweet, I’m sure that’s what offset the salt in my recipe. I do agree with you, though, 1/2 tsp probably is a bit too much even with the xylitol. I need to try making these again with some of your suggestions.

    I love your blog! So many recipes i want to try.
    I am really craving brownies now and i want to make this but- does it have a date taste? Can i leave out the dates?
    Also, instead of using almond butter, could i use coconut oil? or maybe apple sauce? What is the nut butter there for? And do you think i will taste the flavor if i use peanut butter or cashew butter instead?

    • Hi Rena! Thanks so much for your comment! It’s been a while since I’ve made these, but I don’t really remember a huge date flavor. The dates are mainly used to add to the sweetness. I’m not sure how they would turn out not using them, but if you try it, let me know. I definitely think you would be fine using coconut oil instead of the nutbutter. I also think you would be fine using different nutbutters. The nutbutter gives it more moistness. Good luck!

    I am trying to lose the weight I gained back after my gastric bypass. Health problems made getting around a pain in the neck so exercize was put on hold and thus the boredom eating blues commenced.

    I just purchased Montel Williams’s health master. I know it’t not a food processor but do you think it would work? I would really like to try your recipes!
