Kale the Superfood and WIAW

Happy hump day guys! Hope everyone’s week is going great!

I have another round of What I Ate WednesdayTuesday and a recipe for White Bean-Kale-Sausage.

Do ya’ll eat Kale or have you ever tried it? I had never tried Kale until about a year ago and I don’t think I’m alone. Kale is making a come back big time….I don’t know why it wasn’t so widely used until fairly recently.

Without further ado; here’s WIAWT…………

Breakfast was overnight protein oats. I did these strawberry oats a bit different from these and I have to say I really enjoyed them. I prepped these last night in a mason jar. Into the jar went….

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1 stevia packet
  • 1 scoop vanilla protein powder
  • 1/2 cup unsweetened vanilla almond milk (plus a splash more in the morning)

In the morning, I transfered my oats to a bowl and added more almond milk, 1/2 a VERY ripe banana, diced strawberries (always a Summer staple for me), and almond butter. I warmed this for about 20 seconds, just to take the chill off. These were so good; I think I will be enjoying these tomorrow too!

Midmorning snack was an apple pie Larabar enjoyed at my desk.

Lunch was a vegetable soup and salad. I went out to lunch with some coworkers to a local place that I’d never been. I ate off the salad/soup bar and I will definitely be back. The lighting was very dim, so it’s hard to see in this photo, but the soup was a mixture of squash, zucchini, onion and potato and the salad was topped with cucumber, tomatoes, black olives, onions, and beets. Very tasty!

Afternoon snack was a pear. I think this is going to be my new Summer staple, since my husband picked about 50 of these off of a customer’s tree. Isn’t it pretty and it was sweeeeet and juuuiiiccccyyy!

Dinner was leftover White Bean-Kale-Sausage Ragout. I made this on Monday and it is a really great comfort food. In my house in the comfy cool A/C I could almost pretend that it was Fall {almost}. It was perfect served over brown rice and I used this sausage. I would really recommend using a seasoned chicken sausage. It really made it for me!!

White Bean-Kale-Sausage Ragout

Serves: 4-6
Not only is this dish a warm comfort food, but it’s also a healthy SUPERFOOD! Quick and easy…dinner on the table in under 30 mins.
Ingredients
  • 1 tbsp extra virgin olive oil
  • 1/2 cup chopped onion
  • 2 (4 oz.) links chicken sausage, cut into (1/2-inch) (I used Trader Joe’s Sun-Dried Tomato.)
  • 1 zucchini, quartered and cut into (1/2-inch) slices (about 2 cups)
  • 3 garlic cloves, minced
  • 6 cups chopped trimmed kale
  • 1/2 cup water
  • 2 (16 oz.) cans cannellini (Great Northern) beans, rinsed and drained
  • 1 (14.5 oz.) can diced tomatoes, undrained
  • 1/4 tsp salt
  • 1/4 tsp pepper
Instructions
  1. Heat oil in a large skillet over medium-high heat.
  2. Saute onion and sausage 4 minutes or until sausage is browned.
  3. Add zucchini and garlic; cook 2 minutes.
  4. Add kale and remaining ingredients; bring to a boil.
  5. Cover, reduce heat, and simmer 10 minutes or until thoroughly heated.
  6. Serve immediately.
Notes

I definitely recommend using a seasoned chicken sausage. It added so much flavor.
I served over brown rice.

 

After dinner treat was Pike’s Place brew. I was really having to talk myself out of getting froyo, while the kiddos were in gymnastics and this kept me from the unneeded splurge. I’m trying to limit myself to once a week. :'( {That’s a tear, if you weren’t aware.} I swear I’m addicted…..

  2. Oh my lord I am SO ready for fall. It’s definitely my favorite season. I love love love everything about it: the colors, the flavors (cinnamon, pumpkin, oh my), and of course the fashion ;).

    My favorite summer staple has definitely been greek yogurt + fruit. I’ve been loving strawberries, plain yogurt, and peanut butter. Delishhh.

    Favorite comfort food? Peanut butter. I’m in love with peanut butter. I hate that it’s so many calories (even if it’s healthy) because I could totally take down an entire jar.

    Yes I love Kale! I actually just posted a recipe for my favorite way of eating it two days ago. (If you’re interested the link is: http://jessiebearwhatwillyou.wordpress.com/2012/08/13/pb2/) But basically I love them roasted with garlic and balsamic vinegar.

  3. I love kale! My favorite are kale chips by far. I also love throwing it into warm salads with chickpeas. I am not ready for the warm weather to leave but I am excited for fall cooking. It’s pumpkin time!
